Ingredients

6 portion(s)

  • 1 carrot, julienne
  • 2-4 shitake mushrooms, dried, Dried (soaked) or fresh, sliced
  • 1/2 red onion
  • 227g can water chestnuts
  • Handful coriander leaves
  • 1 stalk Celery, cut into large pieces
  • 1 clove garlic
  • 15 grams Ginger, peeled
  • 30 grams oil
  • 200 grams pork mince
  • 30 grams shao hsing wine or dry sherry
  • 15 grams light soy sauce or tamari (for gluten free)
  • 5 grams sugar
  • 5 grams oyster sauce or gluten free oyster sauce
  • 5 grams sesame oil
  • handful bean sprouts
  • 4 Spring onions sliced
  • salt to taste
  • 6 iceberg lettuce leaves

Recipe's preparation

  1. Soak lettuce leaves in cold water for 1 hour, drain then set aside, covered, in the refrigerator.

  2. Slice mushrooms, set aside

  3. Peel carrot and cut into a fine julienne, set aside

  4. Put onion, water chestnuts and coriander into TM bowl. Chop 3 seconds on speed 4 - if pieces are too large, chop for another 1-2 sec, until processed just enough while retaining texture. Set aside.

  5. Without cleaning, put the celery stick into TM bowl. Chop 5 seconds on speed 4, check for size. Aim to retain texture without over processing. Set aside.

  6. Without cleaning, put garlic and ginger into TM bowl. Chop 3 seconds on speed 7.

  7. Add oil, saute for 2 minutes at 100 degrees on speed 1.

  8. Add the mince, cook for 4 minutes at 100 degrees on Reverse + speed soft, MC off.

  9. Add onion, mushrooms and water chestnuts, cook for 2 minutes at 100 degrees on Reverse + speed soft, MC off.

  10. Add wine, soy/tamari, sugar, oyster sauce, and sesame oil, cook for 2 minutes at 100 degrees on Reverse + speed soft, MC off.

  11. Add carrot, celery, beansprouts and spring onions, mix for 10 seconds on Reverse + speed 3. Check for seasoning, add salt to taste.

  12. Remove pork mixture from TM bowl with a slotted spoon to ensure you leave any juices in the bowl.

    Serve in a bowl, set on a large platter with lettuce-leaf cups. To eat simply spoon pork mixture into lettuce cups, roll up and eat with your fingers!

    Used 500g of pork and reduced ginger to 5g for kids tastebuds. Plenty of sauce and still needed slotted spoon. Served in cos lettuce. Great flavours, everyone loved it and plenty left for my lunch tomorrow which is always a bonus. Thanks

    This wss yummy. I didn't have all the ingredients but it was still nice. I strained off the mince at the end using my simmering bakery and then just drizzled a bit of the sauce back over so it wasn't too runny. I doubled the recipe as well. Thank you!

    Amazingly Tasty!

    We had this dish in a restaurant and wanted to try it at home, with surprisingly good results - it was full of different flavours, and while delicious juice kept running out of our lettuce cups, it was a minor set back. We used beef instead of pork, and no 'shao hsing' wine - definitely one to be made again.

    Really tasty! As suggested, I made a few tweaks. Put in 600g pork mince and 100g of pre soaked vermicelli noodles. I also doubled the sauce quantities to keep the flavour there and topled with crushed nuts (which is the traditional garnish)  tmrc_emoticons.)

    I always finish off my chinese stir fry with a table spoon of cornstarch with a bit water mixture to thicken up the dish and also give that "glossy" look. This dish has no exception. Use small amount of cornstarch mixture and increase a bit at a time to your liking of thickness of the sauce.

    This dish has potential but was ridiculously runny, even after increasing the meat to 500g and adding vermicelli noodlles. I used a slotted spoon to drain but still ended up with liquid everywhere which made it a messy dinner. Unfortunately my three year old didnt like it either tmrc_emoticons.(

    I used 500gm mince and 100gm vermicelli noodles and it was perfect! Not runny, not dry. Soaked brooken up noodles for a hour ish then added them after mince was browned. Yum! Thanks Trud tmrc_emoticons.-) I only scored it 3 because I am not a huge sung choi bao fan so was nice but not a favourite sorry

    Lovely served with extra oyster sauce drizzled on top. I added 150g chopped leftover pulled pork with the onions, mushrooms & water chestnuts, there is definitely enough sauce to accommodate extra meat.

    This was... FANTASTIC!!!a bit of sauce but I just followed the directions above and used a slotted spoon!!! nothing too bad at all. I also made sure I had the measuring cap off when it said too!

    For those who had trouble- did you drain the water chestnuts and bean shoots before adding them?? just a thought!!

    As a fan of san choi bao, this is delicious, will certainly  be cooking this again

     

    I doubled the meat and therefore doubled the liquid, however I found it a bit too liquidy, next time I will put it in the Thermoserve for 20 minutes before serving.

    Super easy and delicious I doubled the mince and added a small piece of chilli in with the garlic and ginger.
