Sweet Potato Casserole - Thanksgiving

Ingredients

Topping

  • 1 small can pineapple
  • 1/2 cup raw sugar
  • 120 g Butter
  • 1/4 3/4 cup plain flour
  • 1 egg

Casserole

  • 2 cups cooked sweet potatoes, (Prepare in Varoma)
  • Butter
  • 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla or lemon essence
  • 1 cup raw sugar
  • pinch of salt
  • coconut and raisins, if desired

Recipe's preparation

    Topping
  1. Mix all topping ingredients in TMX bowl - 5 seconds on speed 5.  Set aside.

  2. Casserole
  3. Steam sweet potato in the Varoma.  Depending on what else you are steaming at the same time and how much extra cold water you add this could take thirty minutes or more.


    Butter a  large casserole dish.

  4. Add cooked pieces of sweet potato to the TMX bowl and mash briefly to see how much you have - 10 seconds - speed 6. The casserole requires 2 cups.  Do not worry if not perfectly smooth at this stage.

  5.  Add all other casserole ingredients, except raisins, into the bowl and blitz on speed 6 for another 20 seconds, until blended and mixed through. If raisins are required, add them then gently mix through for 30 seconds on reverse/speed soft.. 

  6. Transfer to casserole dish.

  7. Cover with pineapple topping.

  8. Bake uncovered at 180 degrees C until brown on top.

    I love the way you've got photos of the steps Ros as it makes it nice and easy to follow. Sweet potato is one of my favorite foods so I'll be trying this recipe one day!
