Tangy Lemon Squares
- 125 grams Butter
- 40 grams raw sugar
- 150 grams plain flour
- 3 eggs
- 220 grams raw sugar
- zest of lemon peeled with potato peeler
- 130 grams lemon juice
- 40 grams plain flour

Recipe's preparation
Preheat oven to 180 degrees c. Line base and two opposite sides of a 24 cm square cake tin
Place the 40 g sugar in bowl and mill for 9 seconds on speed 9
Add the butter and mix for 10 seconds on speed 5
Add the 150g flour and mix for 20 seconds on speed 6
Press into the base of the prepared pan and bake for 15 minutes or until light golden.
Meanwhile make topping
Place sugar and lemon zest in bowl and mill for 20 seconds on speed 9
Add eggs, lemon juice and the remaining flour and mix for 10 seconds on speed 5
Poor over base and bake for 20 minutes or until firm.
Cool completely in pan.
Cut into squares
Dust with icing sugar

Great recipe, I love a really tangy lemon so increased lemon juice to 150ml and zest of 1.5 lemons.

Not a winner for me. I made this and it was a disaster ! I've used the base recipe and would recommend that. But ended up making the base in a round low tart dish and filled it with lemon butter.

Have just made this & is quite tart - needs the icing sugar! (that's why it's called tangy I guess), but was just wondering are you supposed to wait for the base to cool down before adding the topping? On mine you can't tell there is supposed to be a base & top! And 'Raw Sugar' is that raw brown sugar or white? I used raw sugar (brown) but the colour of mine is nothing like the picture - it is quite brown?! Still a yummy slice & good way to use lemons

I am not a sweets cook, but
I am not a sweets cook, but these were delicious! I didn't put as much sugar in the filling (used about 180g) and I did panic about how runny it was so put an extra tablespoon of flour in. In hindsight, the extra flour wasn't needed as it firmed up really well in the oven.

These are definitely tangy and I only used 100 g lemon juice ( 2 lemons) and 30 g lime juice ( 1/2 lime) I might adjust to more the lime juice instead of lemon next time. The slice was very easy to make and I didn't even wash the bowl in between cake base and topping.

Absolutely divine, I made in 20cm square tin and the base was a little thicker, I found it hard to press because the baking paper kept lifting driving me crazy, next time I might spray the pan to stick the paper to it... but the taste is so yummy that I'll be making again for sure..

There wasn't enough base for my 24cm slice tin, I had to to make it very thin to get full cover and the filling was very thin (as in final thickness of slice, not texture of uncooked filling). But no problems with the flavour, it was delicious!
