Traditional Caramel Slice

Ingredients

15 slice(s)

Base

  • 150 g plain flour
  • 40 g dessicated coconut
  • 90 g brown sugar
  • 125 g Butter

Caramel Filling

  • 115 g golden syrup
  • 125 g Butter
  • 2x395 g cans sweetened condensed milk

Chocolate Topping

  • 200 g dark chocolate
  • 1 tablespoon vegetable or macadamia nut oil

Recipe's preparation

    Base
  1. Preheat oven to 180◦C (350◦F)

    Melt butter 2-3 minutes at 70◦C on speed 2.

    Add remaining ingredients and mix slowly up to speed 4 for 20-30 seconds.  Stop to scrape down the sides if required.

    Press into the base of a lightly greased 20x30cm tin lined with non-stick baking paper and bake for 20-25 minutes or until golden brown.  Allow to cool slightly.

  2. Caramel Filling
  3. While the base is cooking, make the caramel filling.  Place caramel filling ingredients into TM bowl. With MC in place heat 8 minutes at 70C on speed 3.
    Pour over the cooked base and bake for 20 minutes or until golden.
    Refrigerate until cold.

  4. Chocolate Topping
  5. Place the chocolate into TM bowl and grate for 5-10 seconds on speed 8.
    Melt for 2 minutes on 50◦C on speed 3.
    Pour over caramel mixture and refrigerate for 30 minutes or until firm.

Tip

When cutting slices, dip your knife into hot water and dry with a tea towel before slicing.  This ensures a clean cut and neat slices.

    Absolutely love this recipe. Have been making it regularly for a couple of years now. Always turns out perfect. I follow a tip I read in comments to do caramel at 80C for 9 mins (darker)

    I’ve made this 7-8 times now and it never disappoints. I enjoy sharing it around as the feedback is always great and i keep getting asked to make it again. The only change I make is we only use 1 lot of condensed milk. A small issue with this recipe is not being able to stop at one piece 😋

    Great recipe.....Reminded me of exactly how my nan use to cook it.
    I took notice of the reviews and kept the caramel in the oven until it was golden and it turned out perfect.
    I used milk chocoloate instead of dark and it didn't quite have enough chocolate taste, I think next time, I'll do half/half of dark & milk.

    This is a great slice. I used about 80g golden syrup, 1 tin condensed milk and specified amount of butter, cooked it at 90 for extra couple of minutes. it didn't need to be cooked again in the oven.

    easy instructions to folLow however the caramel was very runny. A great shame as it was delicious but had to be eaten out of a bowl a bit disappointing!  Also the recipe didn't say when to add the oil into the chocolate.

    A SUPER SWEET TREAT!!

    I decided to make this recipe today. I doubled the base mixture as I didn't think it would quite cover the base of my tin when I layered it with the first mix (maybe I had a larger tin). I followed the rest of the directions as written and the end result was perfection!

    This is very sweet and made so much that I was able to share it around with my family and friends. Thank you for sharing!

    I have tried this recipe 3 times now and have failed each time.  Is the caramel supposed to thicken before you pour it on the base ? I follow the instructions but mine is definitely still liquid, no thickening.  The base also floats when I pour in the mixture.  I thought the caramel mixture had to be thick before you put it in ?? What am I doing wrong ?

    Excellent! Made it exactly as per recipe. Caramel was not runny at all - great consistency and loved the crunchy base. Was a hit and will definitely make again. However the recipe does not say when to add the oil in the chocolate for the top. I assumed it was after grating it but being a newbie I don't like guessing with recipes.

    This recipe is amazing! The first time I made it I had to share it to stop eating it all. Made a double batch today for work and have had nothing but excellent reviews. Would highly recommend. The only difference I did was use 1 can of condensed milk for each batch instead of two. Very moreish tmrc_emoticons.-) Thanks for sharing
