Ingredients

Crumbed Chicken Tenderloins

  • 80 grams almonds
  • 50 grams bread, Torn in pieces. Gluten Free if required
  • 40 grams sesame seeds
  • 40 grams sunflower seeds
  • 1 tsp salt
  • 1 tsp Dried parsley
  • 2 tsp sweet paprika
  • 750 grams chicken breast fillets, Cut into tenderloins
  • 2 eggs, Lightly beaten

Recipe's preparation

    Gluten free, low fodmap if required
  1. 1: Preheat oven to 220c
    2: Line a large baking tray
    3: Add almonds, torn bread, sesame seeds, sunflower seeds, salt, parsley & paprika into mixing bowl and blitz 4-6 seconds speed 6 - you dont want it too fine.
    4: tip crumb mix onto a plate
    5: coat chicken tenderloins in lightly beaten egg then press into crumb mixture covering evenly
    6: place onto baking tray and repeat with remaining chicken
    7: bake for 15mins or until chicken is cooked through - turning once
    8: serve with your favourite sides.

Tip

We served with steamed veg and added a dollop of homemade mayo. Just like a chicken burger without the bun!
To make low fodmap you can reduce your almonds and increase bread and sunflower seeds if needed.
Crumb mix is enough to cover up to 1kg chicken breast
