Wholemeal Banana & Date Muffins

Ingredients

12 portion(s)

  • 100 gram pitted dates
  • 2 ripe bananas
  • 100 gram vegetable oil
  • 2 eggs
  • 85 gram organic raw sugar
  • 1 teaspoon bi-carb soda
  • 1 teaspoon vanilla pod, (ground pods/extract/paste)
  • 240 gram wholemeal self-raising flour

Recipe's preparation

    Banana Date Muffins
  1. Preheat oven to 170 C

  2. Grease silicone cupcake moulds with cooking spray and place on baking tray.

     

  3. Place dates into mixing bowl and chop 10 sec/speed 9

     

  4. Add banana and chop 5 sec/speed 7

  5. Add vegetable oil and eggs and mix 3 sec/speed 5

  6. Add bi-carb, vanilla and flour and mix 10 sec/speed 6

  7. Bake for 20 - 25 minutes in the oven.

    Remove from the oven and cool on a wire rack. These muffins can be frozen until future use.

    Made 24 with small cupcake tin.

    Fabulous recipe. I had 3 over ripe bananas so used all 3. Added grape seed oil, extra dates and extra wholemeal flour. As well as bi carb soda, I added 1 teaspoon of baking powder. I always do this when using wholemeal flour. I added maybe a dessert spoon of Natvia instead of sugar and they were heaps sweet enough. Next time I would like to add walnuts with the flour. Thankyou for what will become a very favourite recipe. 🤗🤗

    Thank you for this recipe! They came out so moist and yummy. I used chia egg to replace the eggs and reduced to amount of sugar to 50g and it was delicious. And I used coconut sugar.

    Delicious and fluffy every time. I leave the sugar out and instead add a handful of mini choc chips. This makes 16 medium muffins (5cm diameter base)
    and cook for 18 minutes.

    Delicious! I made up the oil content with 80gm Greek natural yoghurt and 20gm coconut oil and only added 30gm brown sugar and they were sweet enough! 😊

    I didn't add the sugar, found it was sweet enough with the dates. I did add an extra 40g of dates, and one extra banana. 

    kids love them, Thankyou. I freeze them individually for lunch box Treats.

    I only added about 60grams of sugar, could possibly trial and error with the sugar to keep it minimal.

    Beautiful, fluffy and moist on the outside and slightly crusty on the outside.  Also used the coconut sugar 60g and sweetness is perfect.  This is the kind of muffin I am proud to serve up to visitors And I know my family will love.

    I used olive oil instead of veg oil plus 40g coconut sugar instead of sugar quoted in ingredients - they are fluffy, moist and delicious!

    I have a TM 5 and it worked fine even though it says for TM 31.

    Nice flavours. I left out the sugar as per others comments, and only added 80g of oil (I used grapeseed as that is what I had), and also used wholemeal plain flour as I didn't have self raising. They still rose beautifully and were a hit with the kids tmrc_emoticons.) Will make them again. Great for the lunchbox.

    Thankyou for such a easy and wonderful recipe! They are extremely healthy if you don't add the sugar and a great snack idea for all of our family! My 3 year old absolutely adored them! Next time I will maybe add sultanas instead of dates to mix it up a bit but I will certainly use this recipe as a base for many others!  Cooking 7
