- 300 grams zuchinni
- 1 red onion
- 200 grams haloumi cheese
- 80 grams plain flour
- 2 eggs
- 1 tablespoon sprigs of fresh dill
- Oil for frying
- 1 lemon cut into wedges
- 100 grams Greek yoghurt

Recipe's preparation
1. Quarter Zucchini and chop for 2 seconds on speed 4.
2. Remove from bowl and place on paper towel to drain. Squeeze out as much liquid as possible.
3. Place onion & Dill in bowl and chop for 2 seconds on speed 4.
4. Add quartered haloumi and dice for 5 seconds on speed 5.
5. Add eggs, flour and drained zucchini into bowl and mix on Reverse speed 2 for 20 seconds.
6. Heat the oil in a large fry pan. Form fritters using heaped teaspoons of mixture and cook in batches for 2 mins on each side, or until golden and firm.
7. Drain on paper towel
8. Cust each slice of lemon into quarters to make small triangles
9. Top each fritter with ½ teaspoon yoghurt and a piece of lemon and a small sprig of dill

I strained the zucchini in the basket using the MC to help push all the juice out. I did find that I needed to chop or mix everything a little longer than in the recipe to get the correct consistency. Thank you for sharing.
I made these again and because I was a little short of zucchini I added a small ( 125g) can of creamed corn and a few spring onions. A little sweeter but absolutely delicious. Such a great recipe.
This time I used feta cheese and added a little more flour. It wasn't as stiff as with haloumi and I was a little worried but the fried easily and the taste was delicious. Next time skip step 4 and just crumble feta with other ingredients in step 5. Once again thanks. "Closed lid"

Made this into a tart tonight
Made this into a tart tonight and it is delicious! Lined a springform cake tin with filo pastry that was brushed with a little olive oil. I used chives instead of dill. Added shallots with the onions and 2 rashers of bacon in with the haloumi. Used spelt flour instead of plain. Also sprinkled with some toasted pine nuts at the end too. Can't wait to make this for friends! Thanks for sharing!!

I too, like others, modified the recipe - I made it into a tart with puff pastry on the bottom so it was a very quick meal ( felt lazy tonight and couldnt be bothered frying up fritters so shall give that a go another time and I used coriander and lime zest - didn't have dill on hand. I can see this will be a much used recipe - the variations that you could do on this tart, spinach and feta, zucchini and chili and other herbs... Mmm will have to get onto that!!

So glad u are enjoying, I also use this recipe o make a zucchini and holoumi tart as well. Just line base of dish with FILO pastry and then pour mixture on top and bake on 180 till cooked. Yummo! Have made these alot over last few weeks. Delicious! I usually need to put in a bit more flour (80g?). I have also added 70g plain flour and 70g SR flour and made larger veggie burgers on the BBQ. They were a hit. Thanks!

Very tasty - we ended up adding extra flour (double the amount) but probably could have squeezed more moisture out of the zuchinni with an old tea towel rather than trying to do it with a paper towel. Used avacado dip instead of yohgurt because there was some in the fridge to use up.
