Alicia's Tomato Sauce

  • 160 grams onion
  • 2 cloves garlic, large
  • 1 tbsp olive oil
  • 1/4 tsp ground cinnamon
  • 1 tsp whole cloves
  • 1 tsp ground allspice
  • 1 tsp sweet paprika
  • 20 grams salt
  • 200 grams raw sugar
  • 3 cans Whole tomato, 400 grams each
  • 60 grams vinegar, malt

Recipe's preparation

  1. Have your sterilised bottles ready for your sauce.

    Add onion and garlic
    3 seconds / speed 7 / MC on Scrape down bowl

    Add olive oil
    6 minutes / Varoma temp / speed 1 / MC On

    Add cinnamon, cloves, allspice, paprika, salt, sugar and tomatoes
    10 seconds / speed 3

    Cook
    30 minutes / 100°C / Speed 1.5 / MC On

    Cook
    60 minutes / 100°C / speed 1.5 / Replace MC with Steaming Basket

    Add malt vinegar
    30 seconds / speed 2

    Bottle your sauce being very careful as it will be extremely hot

Tip

This recipe makes approx 1.2 Litres. I like to use unwashed empty spirit bottles because they are already sterilised and they look pretty.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    love this was very easy to do I used fresh tomatoes as that is what had and need to use just had to do part 3 for a bit longer just till the tomatoes where chopped up to how I wanted then to be
