- 2 cloves garlic
- 4 red onion s large, peeled and quarted
- 2 teaspoons yellow mustard seeds
- 50g brown sugar
- 160g balsamic vinegar
- 1/2 teaspoon salt
- 25 grams oil

Recipe's preparation
Add garlic cloves chop for 3secs, speed 9 and scrape down.
Add red onions, already in quarters. Chop for 4 secs, speed 3 or 4 depending on how chunky you want the relish .
Then scrape down.
Add 25g oil, 10mins, varoma "Counter-clockwise operation" sp2 with MC off
Add small clean jars in varoma to steam (without the 2nd tray) to sterilise while cooking. Be careful to place the varoma on a chopping board when adding further ingredients.
Add mustard seeds and cook for a further minute, varoma, "Counter-clockwise operation" sp1
Add Brown sugar, balsamic vinegar and salt.
Cook for 5 mins, varoma, "Counter-clockwise operation" sp 1.
Reduce heat to 90c, "Counter-clockwise operation" sp1, for 10 mins and scrape down occasionally.
Take jars off and turn upside down on wooden chopping board to release steam.
Pour off liquid and discard (optional) and pour into jars.

Tip
Leave in jar for a week before eating to enhance the flavour. Should last at least 4 weeks in the fridge once opened.
Add to tarts, breads, topping for pizza, bbq's and on crackers.

Very nice. I accidentally chopped my onion too much and it was more a puree relish then a chunky one but it was still very nice. Probably less balsamic next time

Could mustard powder be used? I forgot to get the seeds when shopping. :O
The enhance the flavour but
The enhance the flavour but reduce the liquid, I suggest cooking on 98 degress for a further 20 mins to reduce the liquid by evaporating it off. Amazing results. Thanks for a great recipe, it worked well for me.

How long does it last before opening the jars? Can it be stored in the pantry or does it have to be refridgerated?
I used the drained liquid in
I used the drained liquid in a Beef and Mushroom slow cooked meal. Lots of fresh herbs and pearl barley. The Onion Balsamic liqour gave the meal a lovely sweetness and balance.
