Basil, Kale & Cashew Dip with Feta

400 g

  • 2 cups basil leaves
  • 1 Cup of Kale Leaves
  • juice of 2 limes
  • 1 Lime zest finely grated
  • 1-2 clove garlic
  • 50 g Pistashios
  • 70 g Cashews
  • 80 g extra virgin olive oil
  • 20 g extra virgin olive oil, (Extra)
  • 1/2 tsp salt
  • 11/2 tbsp Grated Parmesan Cheese

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1: Add Kale to boiling water and Blanch for 2-3 mins

    2: Add Garlic to TM and Chop 3sec/speed 7 scrape & down

    3: Add Lime Zest and 20g Oil Saute 45sec/veroma/speed 1. Scrape to center.

    4: Add remaining ingredience except for Feta. Chop 20 sec/speed 8. Repeat if necessary 

    5: Transfer dip to a container and gently crumble and fold Feta through dip

Tip

Add some Chilli for a little extra zing

If you dont have Pistashios just use all Cashews.

Adjust chop speeds to get the consistency you like.
