- 400 g beetroot fresh, peeled and roughly chopped
- 1 Orange, peel and keep zest, then slice off pith- keep flesh
- 1 Onion, medium (red is lovely), quartered
- 1 Medium Granny Smith apple, quartered
- 1 centimetre ginger fresh
- 1 teaspoon Ground Coriander
- 1 teaspoon cardamom
- 2 Star Anise (or 1/4 teaspoon cloves or ground nutmeg)
- 180 g Red or white wine vinegar
- 250 g sugar, Raw/white/brown etc, any fine!

With blades running on Speed 7, drop orange zest in through hole in lid til all in bowl.
Add beetroot, orange, apple, onion and ginger to TM bowl and grate 6sec / sp 4.
Add spices, vinegar, and sugar, and cook for 28 min / varoma temp, sp 1, with simmer basket on lid instead of MC. Check consistency and if required, add more cooking time until cooked to your liking (depends on the size and juiciness of your orange/apple/beetroot.
Place into sterilized jars and store in fridge.

I used 500 Gm Beetroot and grated extra 3 secs speed 4.
Chinese 5 spice works beautifully. Made 2 medium jars. Well worth it.

Had a lot of fresh beetroot and some oranges to use so this ticked all of the boxes. I used brown sugar and reduced it to 150g and substituted minced ginger for fresh. Don't think you could go wrong playing around with ingredients with this really. I also grated the ingredients at step 2 for a lot longer using speed 6. Not for too long though, I wasn't trying to make slush.

Tasty and easy but way too sweet for my tastes. Id cut the sugar and also probably use less (or no orange) as it had quite an overpowering orange flavour. Really nice though, just not 100% to my taste with the orange and super sweetness. Thanks for sharing!

I made a second batch of this
I made a second batch of this as I didn't like the first one was too spice tasting so I added more vinegar only 80gm sugar a cup of orange juice less spice esp cardamom I put about 1/4 tsp and left out star anise and added 4 tsp mustard seeds and 150 gms balsamic vinegar as well. Happy with the new mix.

wasnt a fan it was dry I added another 150gms of vinegar and cooked another 12 mins. Too much cardamom I think and was a bit too sweet..

I have been making beetroot chutney for years with my standard favourite recipe but this i think beats that one!
I used sherry vinegar, dark brown sugar and chinese 5 spice and it terrific. Cooked it for 8 minutes longer due to the juiceness of the orange but it was fantastic.
We had it with freshly cooked corned silverside on a roll.

Delicious. I made a double batch with no problems. I cut the sugar down to 400g (for double batch) but would reduce further when making it again. I used one lemon instead of two oranges, which worked well. I chopped for longer and also cooked for an extra 10mins as it was still quite liquid. It also thickened on cooling.

Delicious! I'm not a great beetroot fan, but grew some, and this was the absolute best way to enjoy them! I discovered a boutique Beetroot Relish in a local produce shop, and after devouring the jar, used this recipe to recreate it perfectly!

This is a fabulous recipe. My first try at cooking with beetroot and I found it very easy to follow. The result is absolutely delicious. Yum Yum Yummy...... I chopped it a little longer and reduced the sugar to 180grams. I will definitely be making this a regular event at my house,

I cut sugar down to 200g, up'd the beetroot to about 550g, so I chopped for a few extra seconds. I also used cardamom pods as that's all i had, and used 1 star anise and 3 whole cloves
I thought as it just finihsed cooking that it was way too sweet, then about 10 minuts after cooling thought it was too "orangey", then about 10 mins later (still warm) I got that gorgeous burst of beetroot flavour, and all the flavours balanced really well. I'm anxiously awaiting for it too cool completely in the fridge so I know what the final result will be!
I managed to find the star anise and cardamom pods to fish out, but the cloves are lost.
This is delicious, we had it with lamb, even Master 6yrs enjoyed it.

I too chopped for a bit
I too chopped for a bit longer, halved the zest but left flesh as is, also only used 120g sugar based on other comments. I didn't have cardamom so used fennel seeds. The recipe looks fairly versatile so here's hoping! Mine turned out fairly dry with no liquid but maybe that will come with storing, it was a beautiful red colour.

I have just made this and agree with other comments about halving the orange as its quiet strong (unless you like the orange flavour of course). I did find mine didn't appear as "beetroot red" as the picture, anyone else have this?? mine looks more the colour of a bolognaise sauce .....it was also quiet chunky so i blitzed it on spd5 for 3-4secs and it was much more like relish. Its still yummy....

Based on other comments I halved the amount of orange (incl zest). I also had to grate the beetroot/apple/orange/onion/ginger mix longer to get it into small enough pieces.

Yummy - we grew our own beetroot and had to find a way to use them. It's delicious - Can't wait to try it on hamburgers, sandwiches, anything...... if it lasts that long because my husband keeps on taste testing it as it is cooling down.

Will definitely make again - might just chop the beetroot and other ingredients a bit finer next time...I was too scarced to do that this time in case it broke down and became mushy when cooking but it didn't at all. Hi I loved this relish. I made double, that was a mistake. I would call it a BEETROOT EXPLOSION, LOL! i found mine a bit to liquicy, do you find that too? I poured some of the liquid off. I used a little less sugar, so that may be why. We will be having on Australia Day with Kangaroo Burgers.

This was great to make, I used apple cider vinegar as that's what I had on hand, tastes great! The only thing I'd change is use 1/2 of the orange peel as the orange flavour is quite intense.
