Caramelised Red Onion Jam

Ingredients

2 jar(s)

Caramelised onion Jam

  • 600-650 grams red onion, Would work with brown onion too
  • 2 cloves garlic
  • 20 grams olive oil
  • 80 grams Butter, chopped
  • 150 grams brown sugar
  • 1 heaped teaspoon salt
  • 60 grams white wine vinegar, About 1/4 cup
  • 60 grams balsamic vinegar, About 1/4 cup
  • 1 sprig Thyme, Leaves only

Recipe's preparation

  1. Peel and Quarter red onions. Add oil and garlic cloves.

    Mix Sp 5, 5 sec. Do not over mix.

    Add all other ingredients.

    5 sec REVERSE Speed 2

    Scrape Down Sides

    20min Varoma REVERSE soft stir

    MC off to allow steam to escape

    Cool store in fridge.

Tip

Allow to cool before tasting.

Tastes great on pizza, in tarts, on sandwiches.

    The vinegar taste was overpowering. I cooked it for an extra 10 mins to see the taste would evaporate away. A bit better, but would decrease the vinegar next time.

    Easy and tasty. Will definitely make again. Mine started to splatter in the last few minutes - wish I had have read comments first! Simmering basket would do the trick. I made mine in a TM5.

    Really enjoyed the onion jam, only wish the extra jars could be stored in the pantry. Also I placed the simmer basket on top after the jam started to spit out on to the Thermi and bench.

    This was nice - more like caramelised onions than a jam (I expected it to be 'jammier' and the onion more broken down). 

    Very easy and I'm gifting this for Christmas as a quick and easy homemade pressie.
