Dairy Free Vegan Labna (Labneh)

  • 75 grams raw cashews
  • 2 tbsp lemon juice
  • 3 tbsp water
  • 1/4 tsp sea salt
  • 1/8 tsp citric acid
  • 1/8 tsp Garlic powder
  • 1 pinch xanthan gum

Recipe's preparation

  1. Place cashews in Thermomix bowl. Grind 7secs Speed 9 MC on.

    Add lemon juice, water, salt, Citric Acid and galic powder. Mix 5 secs Speed 4 MC on.

    Scrape down sides of bowl with spatula.

    Add Xanthan Gum. Mix 5 secs Speed 7.

    Scrape down sides of bowl. Mix 5 more secs if needed.

    Chill in fridge for 5 mins until thickened.

    Drizzle with some extra virgin olive oil.

I love it on toast with avocado and dukkar for breakfast or lunch.
