Fruit Salad Jam

Ingredients

  • 250 g dried apricots
  • 250 g water
  • 250 g Crushed pineapple in syrup undrained
  • 1 Orange juiced
  • 1 Lemon Juiced
  • 500 g sugar
  • 1 banana
  • 1 apple peeled and cored
  • 3 passionfruits (pulp only)

Recipe's preparation

  1. Method



    • Place apricots in Thermomix bowl with water & soak 3 hours add apple and undrained pineapple and press turbo twice. Place apple peel, core and lemon skins in rice basket and place in bowl.

    • Cook 15 minutes 100C reverse speed soft. Remove basket and discard peel.

    • Add citrus juice & passion fruit pulp & sugar, mix 2 seconds reverse speed 3.

    • Simmer 5 minutes 90C, speed 1.

    • Add sliced banana cook with MC removed and rice basket covering hole in lid 20 minutes, Varoma reverse speed 1 or until jam gels. Test by placing 1 teaspoon jam on saucer from the freezer. When it cools it will wrinkle when a finger is pushed through the jam if setting point has been reached.

    • Bottle, seal and enjoy.

     


    This jam makes a nice change when fresh fruits are in short supply or out of season.


    Delicious served with ice-cream, pancakes or with whipped cream in a sponge

    This is a wonderful recipe for using up left over fruit. I didn't have apricots so I replaced it with a pear and I used a whole tin of crushed pineapple (440g). I added 2 bananas to use up what I had and cooked it a further 10 mins to get a thicker consistency. House smells divine and it really is a fabulous jam. Thank you for sharing.

    Got a batch of fresh apricots today and decided to try it with your jam but I skipped the soaking part! 

     

    Just about out done and it smells and looks amazing!!!!

     Can't wait to eat it  tmrc_emoticons.)

    Yum, yum, Alice.  This jam must be luscious and it is such a pretty jam.  Having seen your finished jam in the jar close up, and now having read the recipe, I can't wait to try it.  Thank you for so generously sharing your jam recipes and your tips for successful jam-making in the Thermomix.  I made my first marmalade today.  I am getting some practice in before attempting one of yours.  Congratulations on having your recipe published on the website and on achieving your Go-Getter certificate.
