Garlic Aioli

Ingredients

300 g

Garlic Aioli

  • 250 grams grapeseed oil or light olive oil
  • 2 garlic cloves, or less for milder strength
  • 1 egg
  • 1 tsp Dijon mustard
  • 1 tsp vinegar, white
  • 1/2 tsp salt
  • 1/2 tsp pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place garlic cloves into mixing bowl and set speed to 7 for 3 seconds. Scrape down sides of bowl, and repeat.

    Place a jug on top of mixing bowl lid and weigh in 250gms grapeseed oil. Set aside.

    Place egg, vinegar, dijon mustard, salt and pepper into mixing bowl. Mix 1 minute 30 sec on speed 4, while very slowly pouring reserved oil in through the mc hole, letting it drizzle into mixing bowl to emulsify.

    Transfer aioli into a bowl and serve immediately or transfer into an airtight jar and store in the fridge.

    A flop for me used light olive oil and is runny drizzled in the oil everything correct so dont understand. Maybe the oil.

    Excellent and easy recipe. I actually put 1TBS vinegar instead of 1tsp!! Was fine though. Also added wholeseed mustard. Tasted great. Leave the MC in and drizzle the oil into the lid.
