  • 40 g onion 1 lg clovegarlic 1 cm Piece of fresh ginger 1 teaspoon oil ½ teaspoon clove ½ teaspoon cinnamon 1 teaspoon pimento 1 teaspoon nutmeg 1/8 teaspoon hot dried chilli 1 teaspoon salt 25 g treacle 150 g vinegar 75 g sultanas 350 g raw sugar 600 g mango peeled and cut from seed

Recipe's preparation

  1. Put onion, garlic and ginger in bowl. Chop speed 8 for 5 sec. Scrape down bowl.
    Add oil. Sauté 2 minutes temp 100 C speed 1.
    Add clove, cinnamon, pimento, nutmeg, chilli, salt, treacle and vinegar.
    Cook for 10 minutes temp 100 C speed 1.
    Add sultanas, sugar and mango.
    Cook 30 minutes at temp 100 C speed 2Counter-clockwise operation reverse.

    Pour into sterilized glass jars. Seal and store

Tip

you can sterilize a few jars by putting a small amount ( 2 cm) water in the jar and putting the microwave for 2 min. This boils the water and the steam does the rest of the jar. The boiling water from each jar can be poured on the lids. Use tongs to handle jars as they will be hot.

    This is delicious. Came out perfect in TM 31 but was runnier mixture in TM5. Maybe due to bigger base not sure - I just cooked for a bit longer. I used 'all spice' - where it says to use pimento - seemed the closest thing according to 'Google'

    Oh yeah, so amazing. We’ve had it on a cheese board, and also with toast sandwiches, and it is a great addition to both.
    I gave one jar to my parents, and my father called the next day to say it was the best mango chutney he’s ever had.
    Oh, and my first time making a jam or chutney too, super simple in the Thermo!

    Made a double recipe again. Used 1 whoe red chilli and no powder. Used 300g coconut sugar and 240g Apple Cider Vinegar. Also used a whle small onion (120g). Yummy. Might try less sugar again next time.

    Wayyyy too sweet, and underseasoned. I added extra garlic and ginger but the finished product still wasn't very aromatic. I water-bath processed three jars and I'll see how it ages, hopefully the sugar mellows a little as it develops.

    Used golden syrup, 1 x chilli chopped, 140gm raw sugar And 2 fresh mangoes. Smells delicious, can’t wait to try it. It is definitely a winner. Tasty on sourdough with a slice of cheese.
    Sterilized the jars in the varoma x 15 mins. Let cool slightly before filling with chutney.

    Made it again tonight. Better than last time. I made a double batch and used 120g onion, 220g ACV, and 490g sugar. I didn't use the chilli powder but put in some chillies instead. Soooooo yummy!!!!!

  • I left out the pimento.

    I left out the pimento.  Added 100 g of dates and reduced sugar by 100g.  Next time I'd use a better vinegar. The one that I used was a bit harsh.  I also chopped for a few seconds after adding the sultanas and dates because the dates were whole and my kids aren't fond of the whole sultanas.  It came out a desirable consistency.

    If the jars are sealed they keep for years. If not the fridge would be ok for months. It is fully sterilized in the cooking. Whole cloves would be fine. Just remember when you use it the cloves will give a bigger hit to the bite but should be fine.Probably use similar weight but a bit one way or the other will just slightly modify the clove tase.

    WAS DELISH!!!! loveing it. already used two jars on pulled pork, meat loaf , chicken, cheese and crackers. will make again!!!

    The only liquid is 150 grams of vinegar. I do not know how you got a liquid chutney. Ther is no setting as there would be with jam but cooking will reduce any liquid in the mix and that is the results.Sorry but I cannot really help with the information you give.

    Kandis and the rest. A confession. I seldom make anything exactly like the recipe every time. Less sugar is a real positive as far as I am concerned. I often use raw sugar for all of the sugar. Brown sugar sounds great.
