Mayo

  • 5 eggs, room temperature
  • 2 egg whites, optional
  • 2 cloves pre-roasted garlic cloves
  • 2 tablespoons creamed or powdered mustard
  • 2 tablespoon white vinegar
  • 250 grams Grapeseed Oil
  • 250 grams extra light olive oil
  • 1/4 --- Boiling water
  • sea salt & pepper to taste

Recipe's preparation

    Mayo
  1. Place Garlic into TM bowl and mince for 4 seconds on speed 7 

  2. Add egg yokes,mustard, salt & pepper &vinegar inot TM bowl blend for 20 seconds scrape down

  3. Add egg yokes,mustard, salt & pepper &vinegar inot TM bowl for 20 seconds on speed 4 leave TM running and begin slowly pouring the oil onto the MC until all the  oil is used (make sure the MC does not lift, you can place the spatual accross the top of the MC this will keep it in place) this will take between 2 to 3 minutes this will make a thick mayo

  4. if you like a thinner style add the boiling water or egg whites slowly if you like a thinner mayo this is optional mix though on on spped 4 

  5. pour into sterilised jar and keep in the fridge

Tip

adding Wasabi - Peri Peri - Anchovies (add when mincing garlic) - Chilli or Paprika - or chopped Capers will give your mayo a new demension

    I tried this and it went lumpy tmrc_emoticons.((  What have I done wrong, I poured the oil in slowly like it said, even though it did seem like a lot of oil??  Can someone  please help me!

     I looove cooking with my thermie!
