- 2 brown onions halved, or 4 shallots
- 6 cloves garlic, peeled
- 400 grams Beetroot, roughly chopped
- 2 celery sticks, roughly chopped
- 3 carrots, roughly chopped
- 1 tsp salt
- 1 tbsp Oregano fresh, or 1 teaspoon dry
- 2 cups homemade stock, 500ml
- 1/4 cup pitted black olives, Kalamalata
- 2 tbsp lemon juice

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place onion garlic beetroot celery and carrot into bowl
Place lid & MC on
chop 10-15 sec - Speed 5
Scrape down bowl (repeat if necessary till "grated" consistency)
Add Olive Oil
Place lid and MC on
Saute 5 mins - Speed 1 - 120 degrees
Add sea salt oregano and stock (or water)
Place lid on & steaming basket (no MC)
20 mins - Speed 2 - 120 deg"Counter-clockwise operation"
10 mins - Speed 1 - Varoma - Mc on
Add olives and lemon juice
Place lid and MC on
Blend 1 min.Speed 5-10 increasing speed gradually

If you can get your head around a non-tradiitonal pasta sauce (I admit I struggled to let go of the 'but it's beetroot' thoughts in my head) it's pretty tasty!
I added fresh parsley on top to serve.
