Orange & Pomegranate Hummus with Balsamic Caramelised Onions

Ingredients

Balsamic Caramelised Onions

  • 2 Red onions, finely sliced into rings or half rings
  • 25 grams brown sugar
  • 15 grams EVOO (extra virgin olive oil)
  • 15 grams balsamic vinegar

Orange & Pomegranate Hummus

  • 40 grams tahini
  • 1 garlic clove, large, or 2 small
  • 400 grams Chickpeas, drained & Rinsed (one tin), or soak & cook your own
  • half lemon juiced
  • 1 orange
  • 1 teaspoon cumin, ground
  • 1 teaspoon coriander ground
  • 1/2 teaspoon chipotle, ground, add less if you prefer or use smoked paprika
  • 20 grams EVOO (extra virgin olive oil)
  • 20 grams pomegranate molasses
  • salt & peper, to taste

Recipe's preparation

    Balsamic Caramelised Onions
  1. Place all ingredients except the sugar into the TM bowl & cook for  30 mins Varoma reverse speed 2 with MC off, in the last 5 mins add the sugar & continue cooking.

  2. Orange & Pomegranate Hummus
  3. Place orange zest & garlic into TM bowl & process 10 secs on speed 10.

    Add juice from orange & remaining Humus ingredients & process for 5 secs on Speed 5 or until desired consistency is reached.

    To serve top with Balsamic Caramelised Onions.

Tip

You can make your own Tahini using sesame seeds & a little sesame oil as per vegetarian cookbook recipe.

Make at least a double batch of the onions so you have them ready top your dip next time you make it tmrc_emoticons.-)

Mill your own spices to make it even tastier.

    tmrc_emoticons.~ I made the Balsamic Caramelised Onion, I would prefer the end result to be more runny. I will try again maybe reduce the cooking time. I will be making pasrty cases with caramelised onion and goat cheese to take to a fundraiser tomorrow night. We are all taking a plate to share.  tmrc_emoticons.D

  • Hi - I didn't make the humus

    Hi - I didn't make the humus but did make the onions - tripled the recipe and it's beautiful - even though in my rush I accidently added raw sugar rather than brown sugar. Would definitely be better with brown sugar and yet is was still delicious. Had it with hamburgers tonight and have jarred some for future use (and Christmas presents). Thanks for sharing.
