Ingredients

2 jar(s)

Sauce

  • 2 cloves garlic
  • 1 onion, large
  • 2 carrots
  • 2 sticks of celery
  • 2 cans Diced Tomatoes (400g)
  • 1 tablespoon tomato paste
  • sprigs fresh basil
  • salt and pepper to season
  • 20g olive oil

Recipe's preparation

    Sauce
  1. Chop the onion and garlic for 7 secs speed 7.

    Add the oil and saute 100 degrees for 2 mins on speed 2.

  2. Add the carrot and celery and chop speed 7 for 7 secs.

    Saute at 100 degrees for 4 mins on speed 2.

    Add the rest of the ingredients (except the seasoning) and cook on Veroma temp for 10 mins on speed 2.

  3. Simmer the sauce by cooking for a further 30 mins at 80 degrees on speed 2.

    Pour into sterilised jars and leave to cool.

    I really enjoyed this recipe. Lovely basic passata that you can change to your own preference by ading different herbs/chillis etc. I also make it for friends and gave some to our new neighbours as a gift. We had an abundance of fresh tomatoes and so made it, without the tomato paste and added another 10 mins as suggested. Thanks for adding Angela!

    A fantasticly easy and flavoursone passata. I use a garlic olive oil. Add some Mexican spices and herbs (leave basil out) and you have a beautiful tomatoe sauce for the taco's - add fresh red chilli's to your liking.

    Great recipe, will be doing it again for sure. Full of flavour, didn't use the tomato paste and cooked it an extra 15 mins. Consistency was perfect. Thanks for sharing.

    Hi Ranz, you could substititue fresh tomatoes for canned and remove the paste, Please increase the cooking time by another 10 mins to compensate.

    I made this today - but didn't have any celery. Didn't read recipe properly and put rest of ingredients in and then sauted 4 minutes. However moved on to rest of recipe and turned out fine. I actually then seived the sauce as I like a smooth passata and also added some of the sieved pulp for added texture. Makes about 600mls. Now all is ready to add to Italian Meatballs in slow cooker.
