Tip
This is delicious spread on toast or waffles or you could use it to make a tart. It's also a great filling for macarons or melting moments.
It makes about 400mL. I haven't tried doubling the recipe yet but I think it would be fine.
Sterilise glass jars by heating clean jars and lids in an oven at 120C for about 10 minutes immediately before filling.
Store in the fridge.

I had made some butter in the morning and had picked up some passionfruit at the local greengrocer so was excited to find this recipe.
Unfortunately I had to go back and buy more passionfruit to get enough pulp (I had to use 17 passionfruit! 😱).
Had no lemon so used lime...SOOOO Goid!

Yum! I noticed another recipe didn't split the eggs so I just popped the white and the yolks in. Used raw sugar and only about 120g. I'll be keeping my eyes out for more cheap passion fruits from here on!! Thanks heaps for the recipe!

This will be a new staple in our house to deal with the masses of fruit we get from our vine. I added about a tablespoon of Jamsetta (you Aussies will know what I mean), (or pectin) and it set beautifully.

Made this today - hoping it thickens as it cools, as it was quite runny. Planning on using it with my homemade yoghurt and granola for breakfast. Licking the bowl out afterwards (my jar was full to the brim!) was the best bit!
Now to head out and get some cream of tartar so I can make some meringues with the leftover egg whites!

Just made this again.....absolute hit. My Passionfruit is overfull. We grow the big yellow psaaionfruit ( 2 fruit yield 180gr). Using the egg white to make the Italain meringue, add some curd and whipped cream. Voila, desert done .
