Hollandaise sauce
- 130 g unsalted butter cubed
- 4 egg yolks
- 2-3 tsp vinegar or lemon juice, to taste
- salt & pepper, to taste
Recipe's preparation
Melt butter 2-3 min, 60', speed 1 and set aside. No need to wash bowl.
Place rest of ingredients in the bowl along with the butterfly. Cook 7 min, 90'(**), speed 3-4. After about 30s of cooking time, slowly start pouring the melted butter onto the lid so it trickles down through the MC gap.
**this produces a very thick hollandaise. For a slightly thinner sauce, cook on 80'.

Tip
I used Apple Cider vinegar, but any other vinegar or lemon juice should work just as well.

I made the half batch in the TM6 and adjusted temp to 80deg and cooked 6 min. I found that the sauce cooked onto the bottom of the bowl so wasn't able to fully scrape out all the sauce. First time making H sauce. Still delicious but also found it was cold by the time I'd poached the eggs (despite putting into a preheated thermo server).
Did taste delicious and we had more than enough sauce for 2 people.

How to fix split hollandaise...
IF YOUR SAUCE SPLIT follow this trick, it worked a treat for me.

Pretty much add roughly 1/2 tsp of boiled water to a heat proof bowl, drizzle in the split sauce whilst continuously whisking thoroughly. When you see it starting to go bad again, add another bit of boiled water and continue until all done.

This sauce is delicious! I doubled the recipe, kept at 90 degrees for same time and used Nuttelex instead of butter to make it dairy-free. I used about 150ml of fresh lemon juice plus 2 generous teaspoons of seeded mustard. Definitely will make again! Thank you for sharing the recipe.

Thanks for all the great comments - I don’t get notifications, so I’m sorry for any and all questions I missed on this recipe. It does seem to have a better consistency when cooked on 80°, but by the time I’d realised this, I couldn’t change the original recipe due to the existing positive comments (I get frustrated when I like a recipe and it gets changed without me knowing :P), so I added the note instead. If you haven’t tried it yet - these eggs pair perfectly with this hollandaise (not my recipe)...

Sorry to hear that, but did you follow the instructions and have the correct amounts of the ingredients? Hollandaise can be very fickle, which is why I was excited to share my recipe since it has never split/scrambled for me (and from the previous comments, I believe it has been successful for loads of other people too). I do feel it works better on 80° though, but as there had already been so many positive comments, I didn’t want to change the original recipe, so instead just added a note.

Sorry, I don’t get notifications for this recipe. I’ve kept it in the fridge for about 3 or 4 days before with no issues. From memory, I heated it in Thermo with a tablespoon or 2 of water. Tastes good cold too though

Worked absolutely perfectly. I cooked on 80°C as suggested and it is a perfect consistency. I used salted butter and lemon juice (2 tsp). I will reduce the amount of added salt next time as its a bit too salty (I didnt consider this when adding my salt and pepper). But once its on the eggs and spinach I reckon it will be perfect! Halved the recipe and it was plenty for my two eggs benny for breakfast! Just remember to use a little less time so your eggs dont cook! I also added malt vinegar and therefore there's no need for salt!
