If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Chop chilli, garlic, ginger and lemongrass 30secs/Sp 7, using spatula to get everything moving.
2. Turn speed down to 4 and slowly add vinegar. Continue stirring for 1min/Sp 4
Cook 5mins/100 degrees/Sp 1
Add sugar, salt, lime zest and juice. Cook 5mins/80 degrees/Sp 1
Pour into sterile jars and store in the fridge
