Sriracha Hot Chilli Sauce

Ingredients

Sriracha Hot Chilli Sauce

  • 4-5 cloves garlic, Remove skin
  • 2-4 cloves shallots, Removed skin
  • 5 grams vegetable oil
  • 1 can diced tomotoes
  • 5 grams fish sauce
  • 15 grams rice vinegar
  • 15 grams raw sugar
  • 100 grams Thai Red Chilli

Recipe's preparation

  1. Wear gloves rubber gloves to remove stems of chilli peppers, wash and clean, dry with papper tower.
  2. Add garlic and shallots into Closed lid chop for 3 sec. / speed 7 and scrape down. Add oil and saute 3 min./varoma / speed1.
  3. Add tomotes, chilli, fish sauce, vinegar and sugar, chop 15 sec. / speed 9 and scrape down. Cook for 7 min./ varoma / speed 2.
  4. Blend 2 min/speed 10 slowly increasing speed. Be careful with heat, or allow it to cool completely and blend it. Transfer to sterlised jars and store in refrigerator.

    Further customise to your liking: add more raw sugar or vinegar and blend 1 min / speed 10.

    I substituted a small brown onion for the shallots, and used 50 grams of Thai chillies, I didn't adjust the quantities of other ingredients. It turned out perfectly.

    Hi, I did not mention to use lemon in my recipe, I use rice vinegar. If you want to make it again try with rice vinegar and see what the difference it makes on this recipe in your experinces. Sometime Lemon can be overpowering and affects or react to the ingredients.

    This is super hot and yummy! Just the recipe that I needed to help use up 1kg of Thai chillies that we picked from our garden. I swapped out the vegetable oil for light olive oil and used honey instead of sugar. I will have to make more jars of it for friends 🌶🌶🌶

    I've made 3 sauces with a variety of heat as I had so many chillis great sauce very easy and so quick. I did use jalapeño peppers in one lot so made a thicker sauce bit still lovely flavour

    Great recipe, very easy, I used a mixture of Chilli's (Ghost) very hot - 400gm Tomatoes

    Made a batch one day, gave away all the sauce and had to make a batch again the next day. My friends love it.

    Thanks for this recipe. I had a heap of birds eye chillies I needed to use. Also used 400gms of home grown cherry tomatoes which were beginning to really ripen. Fussy bro who loves everything hot, loved this sauce

    I store the sauce in small Jars unopen in fridge upto 2 months. If it is opened up to 3 weeks or longer, I alway use clean and dry spoons to remove sauce from the jar, it keeps sauce stay longer. I never try store the sauce in cupboard.

    This sauce is really delicious! The heat can vary greatly though by the types & colour of chillies you use. Really interrested to hear from anyone who has canned/bottle in a water bath and how long it can store in the cupboard or fridge?

    I'm not a big fan of *super* spicy sauce, so I made this with large red chillis instead of birdseyes and it was still spicy and just delicious. I actually added a little bit more vinegar and sugar, but honestly it depends on the flavour of your chillis! Also I used fresh tomato instead of canned. DELICIOUS. THank you for a great recipe!
