Strawberry & Chia Jam - Low FODMAP

Ingredients

2 jar(s)

Strawberry & Chia Jam

  • 500 g Strawberries, hulled
  • 80 g Pure Maple Syrup, Substitute: Rice Malt Syrup
  • 3 tablespoons Chia Seeds.
  • .5 teaspoon lemon juice

Recipe's preparation

  1. Add Strawberries and Pure Maple Syrup to the bowl and cook 20min/100deg/Sp1. Use basket on top instead of MC if need. 

  2. Add Chia seeds and lemon juice and mix 5sec/Sp3

  3. Add jam to sterilised jars.

Tip

Add this to yoghurt as flavouring on serving

or enjoy with some fresh bread or toast, scones, pancakes/pikelets or how ever you wish!

 Have made with as low as 20gm Rice Malt Syrup and still enjoy. Alter amount depending on your taste. 

Recommend subbing strawberries for blueberries! Think i like them better actually tmrc_emoticons.)

    Oh my goodness, this is fabulous. I used a mix of fresh strawberries and frozen mixed berries to make up 500 g.
    Juice of 1 lemon and 4tbs chia, 10 g Stevia instead of sweetener or syrup and it made a nice thick jam .

    Ive made this one with rasperries, blueberries or strawberries and have the say the blueberry one is my favourite! So easy, so delish. Ive been mixing it with greek yogurt for the kids to make additive free flavouree yogurts for them. They love it!

    This was an easy & tasty Recipe. 

     

    I added maple syrup & rice malt syrup as I didn't have enough maple. Then I accidentially added way to much!

    Nice consistency. I halved the recipe knowing I, would be the inlyone eating it!

    I have been Using it more for mixing through natural yoghurt than a spread.

    Measured ingredients precisely but mine made a bubbling overflow mess at the 10minute mark. Reduced to 90 deg, added a small dob of butter and continued for the remaining 10minutes.

    Finally a healthy jam I can whip up in 20 minutes! I love that there is no refined sugar added, and you can vary the amount of sweetener used depending on the natural sweetness of your fruit. The consistancy was very much like jam, for those who find it too runny you could try adding more chia seeds. I halved the recipe and it was more than enough for a large family pancake breakfast. Cannot wait to try different fruits!

    After making this for so long,  I only use 20gm sweetnew now, would prob work fine without also.  Up to personal taste,  but don't necessarily need to do 80gm tmrc_emoticons.)

    I love the flavour of this jam but its not set enough, and a bit sloppy. It will still be delicious with scones or in yoghurt though, I want to try it with jam drops as that whould make it a bit more set. All that aside the kids are still loving it on toast  tmrc_emoticons.) thanks for sharing

    Very nice. My jam also knocked the MC off while bubbling away. Slight panic  :O just replaced the MC with the measuring basket and everything was fine. Great to have the chia seeds for some extra goodness and texture.
