- 600 - 650g veggies of your choice, (cucumber, zucchini, cauliflower, onion are good ones)
- 1 litre water
- 50g ground rock salt
- 320g apple cider vinegar
- 200g raw sugar
- sprig fresh dill, chopped finely
- 30g mustard powder
- 10g curry powder
- 10g tumeric
- 40g Corn Flour
- 100g Additional water

Recipe's preparation
- Wash andchop veggies into even sized chunks before adding them to the TM bowl and chopping on speed 6 for 3 - 4 seconds (depending on how chunky you like your pickles)
- add 1 litre water and salt and cook for 10min / 100°c / speed 3/"Counter-clockwise operation"
- drain in TM basket then put back in the TM bowl with sugar, vinegar and spices and simmer on 90°c for 15min/ "Counter-clockwise operation" / "Gentle stir setting"
- Mix the cornflour, dill and 100g water in a cup or small bowl
- Increase the temprature to 100°c and add the cornflour mix to the Thermomix bowl via the lid hole and cook for a further 1 min.
- Pour into sterilized jars and seal immediately.

Tip
It's important to add the dill at the end, if you add it with the other spices it will loose it's colour etc.
It makes approx 1.1 litres which for me filled 3 x 360ml jars and a bit left over

I just made this but unfortunately had only half the vegetables as I had the wrong setting on paprika 😂. So everything else is the full recipe ingredients and it tastes a bit vinegary. I don't think I added 50 g salt (probably 20 only). Is there anything I can do now to decrease the vinegar taste?

I added some whole spices - coriander seed, black peppercorns and yellow mustard seed and reduced the powdered spices slightly. Also didnt add the dill.

I modified the spices as below after reading the comments and it came out just right for me.
It made 970gms of pickles, I had about 700gms of veges to start with.
300gm vinegar
20gm mustard powder
10g curry powder
10g tumeric

First time i made this, veggies chopped up too fine and i wasn't keen on the curry flavour so this batch, have watched my chopping, omitted the curry powder, less tumeric and seems to be OK. Will wait until cool to see how it tastes.

This recipe's flavour and to some degree texture is very dependant on the veggies used and they type of curry (brand and age of spice aswell). I would definitely encourage you to adapt the recipe to your own tastes, it's one of the best things about Thermomix - that total freedom of custom flavours

Great for Sandwiches, a bit strong but that's how we like it. We only used 100g white sugar as we are trying to be sugar free - and had no raw. And next time would add even less sugar as didn't seem to need it. Also when adding the spices and the cornflour we had to add a mixing process as the simmer function didn't seem to mix everything properly. But Awesome flavour. Thank you.

Made this today and have to say it's delicious!! Very strong compared with what you buy.. BUT.. that's how I like it Perfect with my ham sangas or leftover corned beef sangas for lunch. For me.. consistency was awesome Thanks for sharing your recipe!

I've made this twice, first time with 30/40g of the mustard and curry powders and found it way to strong. Tried it again with only 4g of each and the vinegar overpowered the flavours, it was definitely better with less but may need slightly less vinegar also Next time.

This is a pretty good sweet mustard pickle. I would agree that it is a bit thick but then that probably isn't a bad thing.
I used Japanese Curry which I adore.
Note to self I need to keep on eye on how ong I blitz the veges - probably a bit too much but it didn't impact on the result or flavour

I've just made this again using onion, cauliflower, zucchini, carrot and 1 long red chilli (de seeded). The flavour is absolutely delicious and it has the texture of a Spreadable sandwich pickle, which I've decided I prefer. Still a bit thick I think, but I will play with it again perhaps using a bit less cornflour. I only had 10g of Turmeric but it's still delish. Thanks for your hints and tips in the comments.

Set time & temp, then press the reverse button and set the dial to slow stir (the slowest speed) to start the action. Basically, you just want it to slowly bubble, not stir too fast to chop it any more. Hope that helps

I adapted this recipe from a family favourite my grandma makes. All the quantities are correct as true to the original recipe. One of the many wonderful things about Thermomix is the ease of adapting things like the addition of spices to suit individual tastes. I would encourage you to do just that

I made this recipe exactly as stated i found the amount of spice was far too much for my taste buds, i wondered if there is a typo, 40g & 30g of each spice is a lot, was it meant to be 4g = teaspoon?
I think the flavours would be nice in smaller quantities..

I have only just tasted it hot out of the pot, but it is nice. I put a tiny bit less sugar in it and it is good. I only had about 100g of shallots instead of onion and used zucchini for the rest, but I think it would make a difference to add cauliflower as well. Thanks!

Hi Julie, Thanks for your comments Any colour that the lid has absorbed (ie. from curries, tomatoes or in this case pickles) can be cleaned by washing thoroughly as soon as you are finished and then placing it in sunlight, on a window sill for example. The "staining" is unstable in UV light and it will help to break it up (but won't effect your TM plastics adversly). Any colour absorbtion won't effect the perfotmance of your TM5 at all. Regarding the texture, the smaller your chunks are when you put them in, the less time you need to chop them. I like fast, and use as big a chunk as possible in all my own chopping. You might only want 2 seconds if you want chunkier, or use larger chunks. The recipe definitely does thicken when cooled (especially in the fridge), you want it easy to pour into jars, but cooled to a nice consistancy. I have made pickes in countless ways before and after I got my Thermomix, and I find the flavour is the same as pre thermomix, but the mess and time in making is WAY less than the old way. I would really encorage you to have another go and tweek it your liking, or even better, convert your own family recipe! Hope that helps, and Happy Thermomixing!

I made this in my near new TM5 today and the lid is now stained a weird green colour! I should have realised that would happen I guess! The texture is too fine for my liking and I only chopped it for 3 Seconds. I have a feeling it is going to be way too thick when cooled as well - perhaps I drained off too much liquid? I did use the cooled, drained vege liquid to mix with the cornflour for extra flavour and it tastes ok. I have been spoiled with an old family (not thermomix) recipe though that I have found to be the best one I've used to date. Thanks for the recipe it is super easy and quick in comparison to that one.

It should definitly thicken poppy - once it cools If not you could add just a tiny bit more cornflour in the next batch. The "wetness" can fluctuate depending on the moisture in the veggies a little bit too.
