Ingredients

  • 2 Large potatoes, diced
  • 4 chilled eggs
  • Mayonnaise - made from Basic Cookbook, amt depends on how saucy you like it
  • Greek yogurt, amt depends on how saucy you like it
  • onion shalotts, to garnish
  • 400 g water

Recipe's preparation

    All in one
  1. Add diced potato and eggs to simmering basket

  2. Add 400 g of water

  3. Cook for 16 minutes/varoma/speed 1 with mc on

  4. When done run under cold water to stop cooking process

  5. Peel boiled eggs and cut up

  6. Add eggs, potato and a 50/50 mix of maynaise and greek yogurt.

  7. Add shalotts for garnish

    So easy! I chopped up around 8 potatoes, didn’t need to cook the eggs as I already had hard boiled ones. Mixed 100g mayonnaise with 150g sour cream and dusted with parsley. Yogurt would be fine instead of sour cream.

    What a fantastic potato salad! This recipe is everything you would want in a TM side dish. The yoghurt was a creamy and refreshing addition. Easy, quick and delicious.

    I added Prosciutto. The yoghurt tones down any strong mayo flavours. My kids loved it. Will make again! - Thank you.  Big Smile
