Recipe's preparation
Weigh rice into Thermomix basket, in the Thermomix bowl.
Rinse rice with water from the tap in the sink, return basket with rinsed rice to the TM bowl.
Add water, coconut milk or cream and lime leaf into TMX bowl with the rice in the simmering basket. Cook 20 minutes, varoma, speed 4.
Place into the Thermoserver to keep warm until ready to serve.

Tip
Because this is cooked on Varoma temperature, it's great to steam some extra veg at the same time.
This rice is great to serve with Thai or Indian curries!!

Cooked perfectly and nice and fluffy but although it has subtle coconut flavour ( I used coconut cream instead of milk and I poured remaining liquid over rice to soak in for more flavour) it still didn't taste like the Thai ones. Do you think they add sugar or something for that sweet coconut taste?

I really love this recipe, I find that I have to extend the cooking time slightly for our preference, but that's no big deal! I have also added the peel from a lime (I just peel it with a vege peeler) and add this to the the coconut milk in the bottom!

Thanx, I just tried it before reading your answer... But I found I needed to add a bit more water and cook it for 10 mins longer. Probably because I used a mixture of brown and jasmine rice. Looks perfect for fried rice. having fun experimenting.

I cook veggies in varoma at the same time when I use this recipe. I need to use 3.5 speed and a few min longer to get the rice fully cooked though.
