Asparagus and Sweet Potato Bake

Ingredients

4 portion(s)

Cheese Sauce

  • 500 grams Milk
  • 50 grams flour
  • 50 grams Butter
  • 70 grams cheese, (eg Cheddar, Tasty etc - cut into cubes)

Bake

  • 550 grams sweet potato, (peeled and sliced)
  • 450 grams new potatoes, (peeled and sliced)
  • 250 grams asparagus spears, (fresh - tough ends snapped off)
  • cheese sauce, (as above)
  • 50 grams Tasty cheese, (cut into cubes)

Recipe's preparation

  1. 1. Grate the cheese in individual batches, 6-8 seconds on Speed 8. Set aside in bowls (keep the 70g and the 50g separate).

    2. Put milk, butter and flour into the bowl and cook for 7 minutes at 90*C on speed 4. Add the 70g cheese. Mix at speed 7 for 10 seconds, then heat for 1 minute on speed 3. Pour into a bowl and set aside.

    3. Wash out the bowl and fill with water (500g minimum). Place potato and sweet potato into Varoma and place on top. Cook at Varoma temp speed 1 for 20-25 minutes. Put the Asparagus spears in the Varoma insert and put it in the Varoma to cook for the last 10 minutes.

    4. Arrange cooked vegetables in an olied baking dish. Pour over the cheese sauce and sprinkle with the reserved Tasty cheese. Bake for 20 minutes.

Tip

You could add more or less cheese in the cheese sauce depending on your preferences (and how healthy you want it to be). Also, give the cheese sauce a little stir before pouring over.

    Used chilli cheese for the sauce. Also, cut the asparagus spears into 3 pieces. Used grated parmesan on top. I think this is a very forgiving recipe, and you could flavour your dish by using different cheeses, or soup mixes in your sauce. I put my butterfly whisk in my varoma, then put the vegies on top. All steamed very well, no extra time needed. Also, I made this in the TM5.Smile

    Good basis for any vege bake. Needs salt and pepper seasoning I felt and I added spring onions and paprika on top as I was worried it was going to lack flavour. Next time would probably add a bit of onion in the bake itself and maybe some bacon....but I will use this again as the base for a vege bake. Thank you tmrc_emoticons.)
