Caramelised onion jam

  • 600 grams of brown onions, peeled and quarterd
  • 50 grams of a good olive oil
  • 45 grams of balsamic vinegar
  • 2 bay leaves
  • 2 stemmed sprigs of parsley

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place onions into bowl and chop 8 seconds, speed 5, scrape down bowl
    Add olive oil and balsamic vinegar, bay leaves and parsley and cook 15 mins 100deg speed 2 with the MC off
    Add the brown sugar and cook 15 minutes, speed 2 MC off
    Cool a little and remove bay leaves and parsley sprigs, spoon into a steralized jar and enjoy with hamburgers, sausages, steak, chicken and with cheese platers etc

    Versatility plus is the way I describe this. It's savoury but sweet. You can have it on meats, breads, snack biscuits. I especially like it with cheddar cheese.
