  • 220 g French Green Lentils
  • 1050 g water, (approx.)
  • 4-5 garlic cloves
  • 1 tsp coriander seeds
  • 55 g extra virgin olive oil
  • 1 onion, cut into halves
  • 500 g stock of choice
  • 360 g carrots, cut into thin slices
  • 50 g tomato paste
  • 1 tsp sugar
  • salt, to taste
  • 1 pinch white pepper, Pinch white pepper
  • fresh mint, for garnishing

Recipe's preparation

  1. Insert simmering basket, then weigh lentils into it. Add water until lentils are just covered. Cook 15 min/100ºC/speed 2. Drain lentils and set aside. Clean and dry mixing bowl.

  2. Place coriander seeds and garlic into mixing bowl and mill 5 sec/speed 8.

  3. Add oil and onion and chop 2 sec/speed 6. Scrape down sides of mixing bowl with spatula.

  4. Without measuring cup, sauté 5 min/Varoma/speed 2.

  5. Add all remaining ingredients, except mint and cook 30 min/90ºC/Counter-clockwise operation/Gentle stir setting.

  6. Transfer into thermal serving bowl or other large bowl and cover and set aside to rest for 10 minutes.

  7. Serve garnished with chopped mint.

    A good basic meal. I found it a bit bland so I’ll probably add some curry powder or other spices next time. It was a nice and easy to make. I liked that the carrots were still a bit hard. I added extra veg: green beans and spinach.

    Very nice flavours, my carrots were also a bit hard, might use the  mandoline next time to cut them.  Didn't have French green lentils just the regular green lentils. Will definitely make again!

    The resting time is important.  When I poured it into the Thermoserver, I think that it had not cooked properly but it was at least another hour before we ate and it was perfect!

    Who would have thought such weird ingredients could taste so good. Great as a base for some meat on top.

    You really need to cut the carrots a lot smaller/thinner though, as they don't cook so well in that time.

    This was beautiful, except I'd probably grind the coriander seeds properly for a few minutes on speed 10 at the start because the pieces are quite gritty.

    I presume you meant spead soft instead of interval speed?

    I was amazed at the broth/sauce, it tasted almost like beef stock but was just the tomato & carrot juices, thickened with the lentils. This is on my favourites!

    <one day, I will get around to doing this properly...>
