Cauliflower and cumin fritters with lime yoghurt

Lime Sauce

  • 300 grams plain yoghurt
  • 1 bunch coriander, leaves only
  • 1 lime, zested
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Cauliflower Fritters

  • 320 grams cauliflower, cut into florets
  • 1/2 bunch flat-leaf parsley, leaves only
  • 1 clove garlic
  • 1/2 onion
  • 120 grams plain flour
  • 4 eggs
  • 1.5 teaspoons ground cumin
  • 0.5 teaspoon ground cinnamin
  • 0.5 teaspoon ground tumeric
  • 1.5 teaspoon salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Put all the ingredients for the lime sauce in the TM bowl and blend 10 secnds at speed 8.  Adjust seasoning to taste and chill while preparing the fritters.

  2. Steam the cauliflower florets in the varoma, with about 1L of water in the TM bowl, with settings of Varoma, speed 1 for 20 minutes or until soft.

  3. Set cauliflower aside and, after drying the TM bowl,  chop the flat-leaf parsley, onion and garlic for 6 seconds on speed 6.  

  4. Scrape down the sides of the bowl with the aid of a spatula then add the remaining ingredients, with the exception of the cauliflower.  Beat 10 seconds at speed 3.

  5. Add steamed cauliflower to the batter and mix 10-15 seconds at speed 3, or just until the cauliflower is broken down roughly into the batter.

  6. Shallow fry generous tablespoon amounts until lightly browned on both sides (3-4 mins).  Remove from the pan and drain on kitchen paper.

  7. Serve hot or warm with lime sauce on the side.

    Great recipe. I don’t do the dipping sauce. Have done this a few times. Last time I didn’t cook cauliflower and just blitzed with onion and garlic. I always half the eggs and flour and add a bit of chilli and Parmesan to the recipe

    Theres were really nice. I left the cauliflouwer raw & blitzed it with the onion & garlic. Sauce is yummy too tmrc_emoticons.)
