  • 1 level tablespoon Olive Oil.
  • 175 grams onion, = 1 large
  • 265 grams apple, approx 2, unpeeled
  • 900 grams pork sausages
  • 230 grams Water Chesnuts, drained
  • 20 grams fresh parsley
  • 10 grams Fresh tyme
  • 10 grams Fresh Sage
  • 1 egg
  • 100 grams breadcrumbs, Fresh or store bought
  • 175 grams Cranberries, Dried or frozen
  • 500 grams Streaky Bacon, 16 slices
  • butter or oil for greasing

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Heat oven to 180c - fan forced, 200c normal.

    Line large baking tray with baking paper.

    Prepare breadcrumbs (if making fresh) Tear up bread into Closed lid, Turbo x 4. Transfer into large bowl.

    Chop apples in Closed lid 5 secs, speed 4. Scrape down bowl.

    Chop parsley, sage, tyme in Closed lid, 5 secs, speed 5, scrape down bowl.

    Chop water chesnuts in Closed lid, 5 secs, speed 5.

    Transfer mix to bowl with breadcrumbs.

    Clean Closed lid by filling with water and Counter-clockwise operation Turbo 4x, rinse well. Dry Closed lid.

    Heat oil in Closed lid, 30 secs, 90, Counter-clockwise operationGentle stir setting.

    Chop onion, 10 secs, speed 4, scrape down.

    Cook onion, Varoma, 4 mins, Counter-clockwise operationGentle stir setting, mc off.

    Transfer all ingrediants to large mixing bowl

    Slice uncooked sausages vertically and remove casing, place into large mixing bowl with all other ingredients.

    Add egg to mix, season and hand mix well till combined.

  3. Divide mixture into 2.

    On Thermomat or similar, lay approx 60cms aluminum foil. Spray foil with oil, or, grease with butter, season.

    Vertically line foil with 4 x 2 rows of bacon (doesn’t mater if any gaps between), leaving at least 6cms at the end.

    Place half the mixture evenly over the bacon, scatter ½ the cranberries over mixture and pat them in gently.

    Using foil to help, gently lift the end of foil to roll mixture onto itself into a log shape (like a swiss roll).

    Repeat for second log.

     

     

    Put foil wrapped rolls into roasting tray in oven for 50 mins. Unwrap draining off any juice, then finish roasting for 15 mins until bacon is crisp.

Tip

The rolls can be prepared up to 2 days ahead and kept, raw, in the fridge, or frozen for up to 1 month. Roast up to 1 day ahead if you wish, then reheat, wrapped in foil, for 30 mins.
