Corn and Zucchini Fritters

Ingredients

10 piece(s)

Fritters

  • 310 g tin corn kernels, drained
  • 2 zucchini, small
  • 2 eggs
  • 80 g Milk
  • 1 Cup Self Raising Flour
  • 0.5 teaspoon cumin ground

Topping

  • 1 Avocado, chopped
  • 1 Tomato, chopped
  • corriander leaves

Recipe's preparation

    Fritters
  1. 1) Grate zucchini-  2 seconds/speed 4

    2) Add corn, eggs, milk and mix Counter-clockwise operation/speed 3/30 seconds  

    3)While blades spinning, add spices, followed by flour slowly through holein mixing bowl lid.  

    4) Cook batter in 10cm diameter patties, in oiled frypan over low to medium heat  

    5) Serve with chopped avocado, tomato, coriander and sweet chilli sauce—

    Omg yum!! Best recipe, added a small handful of cheddar cheese, chives and bacon to mix instead of ham - served on lettuce topped with more cheddar, feta, tomato and chives - was awesome and kids loved it!! Definitely a yummy, healthy quick dinner now to be had frequently in our house

    These fritters are the best I have made!
    i used curry instead of cumin and added some salami,bacon, chilli flakes and three spring onions. At the end I also mixed in feta. They were awesome. The leftovers I had the next day topped with an egg,sour cream and Thermomix chutney! Loved them!

    I"m giving this 5 stars because it is super easy and effective. It does lack flavour though. Needs salt and as others have mentioned, add a stronger flavour like cheese at a minumum. Ham/mushrooms/fetta would take it to delicious level.

    Very quick, easy & yummy.....i added garlic, 1/2 onion, cheese, salt & pepper & mushrooms. I also used curry powder instead of cumin. Kids loved them & I served with mashed potato & sweet potato. Will definitely be making again for a quick throw together meal.

    Everyone loved it.  Added cheese, ham and also squeezed the excess water from the zucchini after I had grated it in the TM. Even my 8yr old fussy daughter ate a whole one!

    I used 3 medium zucchini and also upped the other ingredients (100ml milk, 1.5 cups SRF), as I wanted to have some left over for lunches.

    Will definately make again.  A quick, easy mid week meal. tmrc_emoticons.)

    Kids are warming to it. I am hoping for it to be a lunch box filler when school starts next year.

    I think next time round I will make the kids ones first and then when cooking ours I will sprinkle a bit of chilli for a bit of kick. or maybe add some chilli to the avocado.
