Crunchy Chicken Bites

Ingredients

Crumb

  • 60 grams parmesan cubed
  • 180 grams Cornflakes

Chicken Bites

  • 400 grams Chicken Breast chopped
  • 2 heaped tablespoon fresh parsley
  • 2 heaped tablespoon tomato sauce
  • 2 heaped tablespoons seasame seeds, optional
  • 75 grams plain / spelt flour
  • 3 eggs, lightly whisked
  • Mayo to serve

Recipe's preparation

    Crumb
  1. Place Parmesan and Cornflakes in to the mixing bowl and process 10secs/sp10 or until breadcrumb consistency.

  2. Chicken Bites
  3. Place the Chicken Breast ,Parsley,Tomato Sauce and Seasame seeds(if using ) in the mixing bowl and chop sp5/10secs or until finely minced.

  4. Place the Flour , eggs and Cornflake mixture in 3 seperate bowls .

     

  5. Shape Tbsps of Chicken mixture in to balls and dust in flour , then dip in egg and roll in cornflake crumbs to coat .

  6. Place in the Fridge for an hour to chill and then shallow fry in either olive or coconut oil .

    Serve with your favourite dipping sauce .

    Thanks so much for sharings, we oven baked them rather than frying. A lot of crumb mixture was left over so great to freeze for next time.

    This recipe (including the picture) is in the 'Something for Everyone' cookbook by Louise Fulton Keats. The reason for the large amount of leftover cornflake mixture is because the original recipe actually contains 800g chicken (400g breast and 400g thigh). Everything else the same. Just in case that helps anyone!

    These were great! I did one tbls tomato sauce and one of sweet chili. I also found I had heaps of the coating left I have frozen it. I browned them in the frypan then put in the oven.

    I found they took a bit of time to make, but they were very nice with salad. I actually forgot to serve them with a dipping sauce, so that would have made them even better, but they were very nice anyway. tmrc_emoticons.)

    These are a winner with everyone in the house, including the youngest who is the fussiest. I have divided up into snap lock bags for school lunches next week. I didn't use cornflakes due to the sugar content, however I used rice crumbs with the parmesan. The parmesan gives its a wonderful flavour & texture. Thank you so much for sharing.

    Awesome, Awesome, Awesome!! Kids loved them with home made tomato sauce ( which I fooled them was from the shops!!) Felt so good giving my kids a fast food dinner without the fat and preservatives!! I flattened them and formed them into nuggets like from the shops and kiddo's were none the wiser And asked when can we have this again mum!! Thank you so much for sharing!!

    Delicious & easy! I had way more than 1/2 the cornflakes left over. Only need about 50g & 2 eggs was plenty for the batter. Adjust the recipe amounts & I'd give this 5 stars! Thank you tmrc_emoticons.)

    Thank you very much!! I have never before made such a winner dinner in so little time! I did not have time for the chilling bit and went straight to frying. No problem. Also had quite a bit on Corn Flakes mix left but as I am sure this will become a regular quick lunch and field trip snack, that is not a problem at all tmrc_emoticons.-)
