Cucumber, Ginger and Cashew Salad

Ingredients

4 portion(s)

  • 1 Continental Cucumber, (or 3 small Lebanese Cucumbers)
  • 1 lime, (juiced)
  • half centimetre piece fresh ginger
  • 100 grams Unsalted Cashews
  • handful of fresh corriander leaves
  • 2 stalks shallots/spring onions
  • 20 grams olive oil
  • salt and pepper to taste

Recipe's preparation

  1. Place ginger into bowl and chop 5 seconds speed 7

    Add remaining ingredients and chop 3 seconds speed 4.

    That's it! How easy is that!

    If you wanted to spice it up a little more you could add a fresh chili with your ginger at the start and then add a tsp of fish sauce....gives it more of an Asian flavour

    I adored it! The spring onions should be chopped a little before the other components. I cooked trout and served it with it!

    Great tasting salad that everyone loves. However I find it much better if I chop the cucumbers by hand into chunks instead of chopping them in the TM bc they get too chopped and a lot of water comes out in the salad.

    Yummy tmrc_emoticons.) I don't like coriander so added parsley and mint Instead. Kids and hubby loved it  tmrc_emoticons.) great fresh accompaniment to fish

    I made this for my husband and it was a huge hit!  I used the juice of a lime though, as it was a little unclear (but sure i wasn't meant to throw the entire lime in !
