Flu Fighter Chicken Soup

  • Fresh Corriander, leaves and roots
  • 1 lemon, zest & juice
  • 1tbs Fresh Tumeric, or 1 tsp dried ground tumeric
  • 2 garlic cloves
  • 2 spring onions
  • 2tbs fresh ginger
  • 1 fresh red chilli
  • 2tb fresh parsley leaves
  • 2tbs coconut oil
  • 2 - 4 chicken breasts, cut into cubes
  • 1tbs TMX vege stock paste or chicken stock paste
  • 1 litre water or liquid chicken stock
  • 3tbs tamari, or soy sauce
  • 30g mirin, optional
  • 1tbs miso paste
  • 100g baby kale or spinach leaves
  • sea salt & pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Flu Fighter Chicken Soup
  1. Place coriander leaves into TM bowl & chop for 3 secs/speed 7. Scrape out of bowl & set to one side.

    Place lemon zest, parsley, ginger, spring onions, fresh tumeric, chilli, coriander roots & garlic into the TM bowl chop for 20 secs/speed 10. Add the coconut oil & cook for 2 mins varoma speed 1. Add the stock paste into the bowl.

    Place the cubed chicken breast into the simmering basket inside the TM bowl. Cover the chicken with the water or stock.

    Set time 20 mins on 100 degreesspeed 2.

    Ensure chicken is cooked through, & empty cooked chicken pieces into the broth into the TM bowl. Then add all remaining ingredients (except the kale or spinach) Don't forget the chopped corriander. Mix 10 secs reverse speed 1.

    Place baby kale & or spinach leaves into soup bowl & pour the hot broth over, making sure to portion out the chicken cubes into the bowls. serve with extra chilli slices & more lemon juice to taste.

    Absolutely amazing!!! I'm currently fighting off a cold and this has worked wonders instantly!! I used chicken thighs instead of breast and to make it as potent as possible, I also used 1L of chicken bone broth for the liquid, fresh tumeric and frozen organic kale (thrown in before the 20 min cook).
    I also didn't need any further salt & pepper as its absolutely bursting with flavour! 5 stars!!!

    Just made this soup for lunch. The family have Covid, so thought I would give it a try. Oh my! We all felt immediately better! Sinuses cleared, throats less sore, headaches gone. So good. Flavour was a little weird for our liking, but benefits were immense. Will definitely make again at the sign of a sniffle!

    Made this for my sick kids (& also hoping it might stop me getting the flu) & it was delicious. As per above comments, I added carrot & celery to the mix. I used 3 chicken breasts & ended up having to cook it about an extra 5 mins after stirring it whilst in the simmering basket.

    Didnt say how much parsley or coriander so just used a handful of each, took the advice from Bernie-Brews comments and also chopped some carrot and celery.  Was delishes! I used a whole chilli and it must have been a strong one as it was pretty darn hot.    Will definitely be making this again!!!

    This is possibly the most amazing soup I've ever had in my life!  Thought I had miso paste but didn't so made it without and it was still great.  Also just used 1 litre liquid chicken stock.  And fresh spinach in the bottom of the bowl.  Added the fresh coriander and parsley on top.  Didn't add chilli as I thought it would be hot from adding one chilli but it wasn't at all.  tmrc_emoticons.)

    oh my goodness! this is delish! Made this tonight as my son is unwell and I think his immune system is shot because he keeps picking up all the bugs that are about! We all had it for dinner and it was amazing! I left out the miso paste and the mirin as I didn't have any in the cupboard, and it still tasted delicious! I think I will just keep this in the fridge so we can reheat it through the week during the winter months! Yummo! Thanks for sharing another great recipe!

    OMG! This soup is amazing! Whether you have the flu or not, it's worth making. It's full of flavour and zing. Will be making this soup as often as I can.I chopped my ginger (about 30g) with the onions and garlic and just threw in some coriander leaves at the end rather than chopping them in TM. Loved it!
