Garlic Sweet Potato Wedges

  • 1kg sweet poatoes, washed skin on, cut into thick wedges
  • 2 large garlic cloves
  • 2tbs olive oil
  • sea salt & pepper to taste
  • 200g fetta cheese, crumbled
  • 2 tbs fresh italian parsley
  • 1 tb Fresh Lemon thyme
  • 1tbs fresh oregano leaves

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Garlic Sweet Potato Wedges
  1. Heat the oven to 190 degrees.

    Place garlic cloves into the TM bowl & chop for 3 secs speed 7

    Place the rustic style sweet potato wedges into a bowl with the garlic, salt & pepper then drizzle with olive oil. Mix through to coat all the sweet potato with the oil & garlic. Roast in the oven for about 25 mins or until cooked & crispy. While the wedges are in the oven (no need to clean the Thermomix bowl) place all the herbs into the TM bowl & chop for 2- secs on speed 5 for a rustic chop. When the wedges are cooked & crispy sprinkle with fetta & chopped fresh herbs. Serve straight away.

    Perfect to serve as a side to a main meal, or an appetizer or snack.

You can use some white floury potatoes instead or as well as the sweet potato or carrots.

    Anything with sweet potato and fetta and you've got my attention! This is a great recipe and super easy. Have also substitutted fetta with goats cheese. I have made this many times now and will continue to be on regular rotation in our house.

    Yummmmm..... I made the sweet potato tonight to go with our meal and it was so tasty. My children dont like the look of herbs so i decided to blend it all together at the start with the garlic and added it all on before putting it in the oven, I also cooked for an extra 30 mins to get a nice crunchy texture and it turned out beautifully tmrc_emoticons.)     i cooked the sweet potato probably another 20 min or so and I used parsley, basil, and rosemary because I didn't have the other herbs
