Leek and Potato Bake

  • 600 grams potatoes, peeled, sliced
  • 200 grams cream
  • 1 heaped tsp Vegetable stock paste
  • 30 grams Butter
  • 1 pinch ground nutmeg
  • 80 grams cheese, grated
  • 1 leek, sliced
  • Salt and pepper, to taste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 210 degrees.
  2. Grate 80gm cheese, 3-5 seconds on Spd 8, set aside
  3. Add sliced leek to bowl and cook with 30gm butter for 3mins on 100 degrees, Speed 1
  4. Add rest of ingredients, except cheese, and cook for 15-20mins on 100 degrees, Reverse, Soft Speed until soft but not breaking up.
  5. Pour mixture into baking dish. Sprinkle with cheese and bake for 15 mins.
  6. Rest for 10 mins before serving

Tip

You can substitute Nutmeg for Cayenne Pepper

Add a clove of garlic (chopped for 5 seconds on Spd 5) with leek, if desired

Ham or bacon can be added too (saute bacon with the leek)

    Great recipe, I would never have thought to cook the sliced potato directly in the bowl, but mine turned out perfectly.  Started with 15 minutes and then added another 3 minutes until the potatoes were just cooked but not too soft.

    Also used sour cream (100g) and milk (50g) as that's all I had in the fridge.  And shallots instead of leek.

    Will definitely use this recipe again.

    Very tasty, i added a teaspoon of edc vegetable stock and 60g of bacon.  Next time i'd just cook the potatoes for 15 minutes maximum, 20 minutes turned them to mush :/ still nice though tmrc_emoticons.)

    Made this tonight, I probably should have read the notes as I cut my potatoes far too thin and cooked for 20mins and ended up a lot more 'chopped/broken down' than Id like but that being said I will definitely make this again as the flavour was awesome. I added 2 rashers of bacon half a leek (as thats all I had left) and a whole onion. I've always made my potato bake with a packet of french onion soup through it so was wondering if the flavour was going to be rich enough. It wasnt the same but still really yummy

    This is an early photo. I cut out the milk and less cream in the recipe since that photo.

    I cut the potato about 3-4 mms, just like for non-TMX potato bake.

    They are definately cooked in the bowl, not the basket, and hold their shape. Maybe try the recipe and be surprised!

    This was really yummy. Some of my potatoes held their shape but it wasn't really important as far as cooking or presentation as cheese covers the top. My potatoes were only roughly chopped using a medium sized slice. Thanks for sharing.

    Yum! I ended up just thinly/evenly slicing potatoes by hand. And was really impressed that the potatoes held their shape (I cooked them in thermomix for 15mins). Yummy yummy yummy!!! I agree, I think the leek gives it a lovely flavour.

    This was delicious!!! I added some diced bacon as I had a bit left over from another recipe and I accidentally let it cook a tad too long so I ended up with Potato and Leek Mashed Bake! Was still super tasty though. Definately make this again.

    Didn't have any leek last night so made with onion instead and was delicious. Also added some sweet potato (keeping the potato and sweet potato to 600g). Next time I'd probably add some garlic (which I didn't see in the notes until it was too late) and cook for 15 instead of 18 minutes. Definitely will be trying it with leeks too!
