Bec's Thick Pumpkin Soup

Ingredients

4 portion(s)

  • 300 grams Kent pumpkin, Roughly chopped
  • 300 grams butternut pumpkin, Roughly chopped
  • 1 potato, Roughly chopped
  • 2 cloves garlic
  • 1/2 brown onion, quatered
  • 1 tablespoon Vegetable Stock Concentrate (EDC)
  • 1/4 leek, sliced
  • 400 grams water
  • salt and pepper to taste

Recipe's preparation

  1. Add onion, leek and garlic to bowl  4seconds, speed 5


    Scrape down sides


    Add oil, cook varoma, 4mins speed 1


    Add rest of ingredients to bowl


    Cook varoma, 18-20 min, speed 1


    Puree 10seconds speed 4
