Beef & Noodle Soup (Pho Bo)

Ingredients

2 litre(s)

Beef & Noodle Soup

  • 60 g beef stock concentrate
  • 1500 g water
  • 1 onion, halved
  • 3 centimetres ginger
  • 2 garlic cloves
  • 3 star anise
  • 1 cinnamon quill
  • 30 g raw sugar
  • 40 g fish sauce
  • 200 g Rice Vermicelli
  • 400 g beef eye fillet
  • 1/2 bunch mint, fresh
  • 1/2 bunch coriander
  • 100 g bean sprouts
  • 1 long red chillies, thinly sliced

Recipe's preparation

    Beef & Noodle Soup
  1. Place ginger and garlic into TM bowl and chop for 3 seconds on speed 7.  Add onion and chop for 2 seconds on speed 5.

    2.  Add star anise, cinnamon, sugar, fish sauce, stock and water to ingredients in TM bowl and cook broth for 30 minutes on Varoma temperature, reverse speed 2.

    3.  As broth is cooking, place noodles in Thermoserver and cover with boiling water.  As you wait for the noodles to soften you can take the opportunity to prepare beef, chilli and herbs. 

    4.  Drain noodles and place beef strips on top of noodles in Thermoserver. Pour broth into Thermoserver (which will gently cook the meat) and use the simmering basket to strain solids (star anise, cinnamon).

    5.  Serve up individual bowls then top with the bean sprouts and garnish with chilli and fresh herbs according to your tastes.

    This was easy to make and had a beautiful flavour. Was worried that my boys wouldn't eat it as there was a strong cinnamon and aniseed aroma but the flavour was completely different and they loved it! The only thing I did different was use rice stick noodles instead of vermicelli

    So so yum!! We made this tonight and my partner who eats Pho a lot was really happy with it! Only tip I have is to slice the beef into strips as thinly as possible. Can't wait to make this again!

    Yummy recipe, quick and easy,  however I found that it boiled over and I had to turn it down, to prevent it from boiling over further. Is there something I should have done differently.

    I made this tonight, broth is not as clear as the restaurant stuff I'm used to. Still delish and very tasy. I used vegetable stock instead of beef and that probably made it a bit more salty. I added Hoi Sin sauce and lemon juice as I would in the restaurant.

    Nice recipe. I agree with comment below - next time I'll use half the noodles. 

    Needed a bit more flavour for me, so I'll be playing around with this - might double the herbs, using half through the actual cooking process and maybe add some Vietnamese mint. 

    I steamed vegies in the Varoma at the same time and added to the whole mix at the end. Love my vegies

    Worked a treat! Great recipe!! Just a few hints... I put too much sugar in, but adjusted it with dash of soy and squeeze of lime.

    i also added some chopped mushroom and spring onion... Will make again - loved it!
