Cauliflower and Cheddar soup with Basil Pesto

Ingredients

PESTO

  • 20 grams Parmesan cheese
  • 80 grams pine nuts
  • 4 sprig Basil leaves
  • 60 grams olive oil
  • 20 grams Baby Spinach Leaves, optional

Soup

  • 25 grams Butter
  • 25 grams olive oil
  • 3 clove garlic
  • 2 leeks
  • 1/2 Cauilflower
  • 2 --- potatoes
  • 1000 grams water
  • 4 heaped teaspoon vegtable stock edc
  • 250 grams Mature Cheddar Cheese
  • 200 grams cream
  • Salt and pepper

      TM 5
      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Make Pesto First
  1. Chop Parmasen Cheese into small blocks

     mill 10 seconds speed 10 

    Add the rest of ingredents 

    10seconds speed 6 

     

    Set aside in seperate bowl 

     

    Clean and Dry Bowl 

     

     

  2. MILL CHEESE 

     

    Add 250g Mature cheddar cheese ..  1

     

    10 seconds speed 10 

     

    Set aside  no need to clean Bowl 

  3. SOUP
  4. Add Oil Butter and sliced Leeks and Garlic 

    saute 3 minutes . Temp 120  Speed 1 

     

    Add

    Diced Cauliflower enough to sit just under the lid 

    Potaoes  

     

     

    Mince speed 8.. 10 seconds 

     

    Scrap down side of bowl 

     

    Add the Water  and Vegtable stock 

     

    cook for 20 min Speed 3  temp 98 

     

    Once finished cooking make sure Potaoes are tender 

     

    Blend speed 5 for 30 seconds .. increading up to speed 8 for another 30 

    Add 

    Cheese and Cream  and salt and Pepper to taste 

    set Thermomix for 3 min  temp 70  speed 2

     

    Pour in to the thermobowl  then adding your pesto on top  drizzled with olive oil if needed and pepper
