Cauliflower soup with bacon dust

Bacon dust

  • 150 g Rindless Bacon Rashers

Cauliflower soup

  • 60 g Parmesan cheese, crust removed and cut into pieces (3 cm)
  • 900 g water
  • 3 tsp Vegetable stock paste (see Tips)
  • 950 g cauliflower, cut into small florets
  • 2 pinches sea salt, to taste
  • 25 g butter, to taste or olive oil, to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Bacon dust
  1. Preheat oven to 200°C. Line a baking tray with baking paper and place bacon rashers onto it.

  2. Bake for 20 minutes (200°C), or until very crispy. Lay out bacon on paper towel and ensure all liquid is absorbed. Allow bacon to cool and dry out.

  3. Once cooled and dry, place bacon into mixing bowl and mill 20 sec/speed 9. Transfer into a bowl and set aside.

  4. Cauliflower soup
  5. Place Parmesan into mixing bowl and grate 10 sec/speed 9. Transfer into a bowl and set aside.

  6. Place water, stock paste, cauliflower, salt and pepper into mixing bowl and cook 20 min/100°C/speed 1.

  7. Add butter or olive oil and cook 5 min/100°C/speed 1, then blend 1 min 30 sec/speed 5-9, increasing speed gradually.

  8. Serve soup hot with reserved Parmesan cheese, topped with a sprinkle of bacon dust.

Tip

Variation:

Bacon truffle cauliflower soup: add 150g cooked bacon pieces, to taste when serving and substitute the butter with 1-2 tsp truffle oil for a slightly more decadent flavour.

    Lovely soup. Easy to whip up and extra yummy when dunking a cheesy puff in!

    I sautéed an onion between grating the cheese and starting the soup for a richer flavour.

    Next time I'll add the cheese to the soup before blitzing and more seasoning.

    Love this recipe sooo much! Definitely a winter favourite here. I often use a bit of Broccoli to make up the weight and maybe a bit more butter than listed 😅. And the bacon dust ..... yum!!!

    I made this and my husband and daughter loved it. I broke the bacon up and put it in the last 30 seconds of the blend. Will definately be in my fav. list. A great winter warmer with plenty left over to take to work lunch for several days.

    Great soup, i only had 600g of cauliflower so then I used whites potatoes & a turnip.

    added minced garlic & only put in 800g water. Soup turned out beautiful & thick.

    also ended up only blending it for 30 seconds starting at speed 5 to speed 7.

    Great recipe. Thanks. My variation was no bacon, 1-2 tbsp double cream instead of cheese, 1.5 tbsp veg stock, and 35 grams of butter. I didn't weight the cauliflower I just put one big cauliflower head in there and kept 900g of water. could reduce water next time as my version a little watery. Hit with hubby and kids.
