Chicken and Sweet Corn Soup

Ingredients

  • 25 grams spring onion, (two pieces)
  • 2 cloves of garlic
  • 30 grams olive oil
  • 1 tablespoon chicken vegetable stock concentrate
  • 400 grams Chicken, diced, (I used thigh pieces)
  • 170 grams water
  • 20 grams cornflour
  • 2x 420g creamed corn cans
  • 1 tablespoon light soy sauce
  • 1 teaspoon fish sauce
  • 2 eggs

Recipe's preparation

  1. Chop garlic and spring onion 3 sec / speed 7. Then add oil and sauté 2 min / 100oC / speed 1. 

  2. Add chicken cubes and chicken stock concentrate and sauté 4 min / 100oC / Counter-clockwise operation /speed 1.

  3. Mix water and cornflour together until dissolved. Set aside.

  4. Add creamed corn, soy sauce, dissolved cornflour and fish sauce into the bowl and cook 10 min / 100oC / Counter-clockwise operation /speed 1.

  5. Add the two eggs to the bowl and using the spatula, break the egg yolks and mixing the egg through the soup. Continue cooking 5 min / 100oC / Counter-clockwise operation /speed 1.

  6. Pour the soup into your ThermoServer and stir the soup to ensure the everything is combined. Serve immediately.

Tip

This recipe makes for a very thick soup. To thin the soup down, add water to achieve the desired soup consistency.

    I used cooked chicken left over from the weekend, added 1 cup of chicken stock, loved loved loved this.  Will be making this on a regular basis I do think!

    It was a chicken and corn soup, but it wasn't the chinese chicken and corn soup that I was expecting. I would probably add some ginger for the taste. It also needs to cook for longer because some of the chicken pieces were not cooked through.
