Tip

I usually use Chicken Thigh as this is a tender cut

Evaporated Milk is an alternative to using cream

As an alternative  if you have left over cooked chicken you could add this in 5 minutes prior to the finish time and this will allow for the chicken to be heated through.

Great tasting soup. I decreased the amount of liquid by about 300-400g and used milk instead of cream.

I put some noodles in the bottom of the bowls before serving so it was chicken, corn and noodle soup. I made my TM stock with half the salt so found the soup needed quite a lot of seasoning, otherwise it was quite delicious!

We used just 1 onion and reduced the total fluid volume, and the flavour was beautiful. Will make it again.
