Chickpea and leek soup

Ingredients

6 portion(s)

  • 2 tins chickpeas, rinsed and drained
  • 1 medium potato, peeled and cubed (1-2 cm)
  • 5 medium leeks, or 2 large leeks, roughly chopped
  • 20 g olive oil
  • 1 knob of butter
  • 2 cloves garlic, peeled
  • 2-3 tsp veggie stock paste, or to taste
  • salt and freshly cracked pepper
  • 20-30 g Parmesan cheese, to serve
  • extra virgin olive oil, to serve
  • 850 g water

Recipe's preparation

  1. Grate parmesan for 10 seconds on speed 8. Set aside.

  2. Place garlic in TM bowl and chop for 2-3 seconds on speed 7. Add leeks and chop for 1-2 seconds on speed 6. You might need to chop the leeks in two batches – just chop half and then add the other half and chop, leaving the first half in the TM bowl.

  3. Add oil and butter and sauté garlic and leeks for 7 minutes on Counter-clockwise operation+ speed 1.5 on Varoma temperature.

  4. Add chickpeas, cubed potato, stock paste and water (or enough water to reach 2L). Cook for 15-20 minutes on Counter-clockwise operation+ speed 1 at 100˚C or until potato is cooked through. Drop the temperature to 90˚C if the soup starts to bubble too much, or sit the rice basket on top to reduce spatter.

  5. Season to taste then pour half to two thirds of the soup into a Thermoserver or serving bowl. Blend the remaining soup for 40-50 seconds by slowly going from speed 1 to speed 9. Add blended soup to chunky soup and stir.

  6. Ladle into serving bowls and garnish with a good drizzle of EVOO, grated (or shaved) parmesan cheese and freshly cracked pepper. Serve with crusty bread.

Tip

By only blending some of the soup you end up with a lovely smooth consistency with a bit of texture. You can alter the proprtion that you blend to taste.

    Hello Erica,

    I love leeks and I love chickpeas so had to make this delightful soup. Thankyou for sharing the recipe. It is lovely!! I did not have a potato so used a purple sweet potato which I found in the fridge.  Followed everything else to the letter and both my husband and myself found it to be a delectable soup. Will copy and laminate and  shall be a regular in our household. Like the half smooth half chunky method!! Keep up the great work!!! tmrc_emoticons.)

    Thanks Erica.  The flavour seemed to develop a bit more the next day and I also put a lot more salt and pepper in.  I might try it again.  Next time I would also blend at least half of the soup so there are less whole chick peas.  There are lots of delicious soup recipes to try it is hard to keep up!

    Hi robpow and 6Hewetts, I'm sorry to hear about your less than yummy experience with this soup tmrc_emoticons.( Whenever I've made it, it's turned out delicious! Without knowing exactly how you made it, it's hard to say what went wrong... could have been the stock paste or the amount? Or perhaps the seasoning? My stock pastes vary quite a bit so I tend to check the flavour of the soup part way through Step 4 and then add a bit more stock paste if I think it needs it. I also check the seasoning just before blitzing it and add salt and pepper to taste. I'm a bit of a cracked pepper fan so I tend to put quite a bit in! I do hope you try this recipe again, it's such a lovely soup for a winter lunch, expecially when served with fresh bread. Cooking 1
