Creamy Beetroot and Carrot Soup

  • 1 brown onion, peeled and quartered
  • 1 medium carrot roughly chopped
  • 2 sticks celery roughly chopped
  • 50 g extra virgin olive oil, (EVOO)
  • 300 g Beetroot, peeled and quartered
  • 3 large floury potatoes
  • 2 tbsp TM stock concentrate
  • 600 g water
  • Salt and pepper to taste
  • 200 g sour cream
  • Chopped chives and dill for garnish

Recipe's preparation

  1. Place
    onion, carrots and celery into TM bowl and chop for 5 seconds on speed 4.
    Add EVOO and cook for 6 minutes at Varoma temperature on speed 1.



    Add
    beetroot, potato and stock and with the aid of the spatula, chop for 10 seconds on speed 5.



    Add
    water and cook for 40 minutes at 100ºC on speed 2.5. Adjust seasoning.



    Puree
    for 30 seconds by bringing speed up
    slowly to speed 8.



    Serve
    with a dollop of sour cream and freshly snipped herbs.

    Lovely taste. Following the preparation methods, we substituted heavily as didn't have all ingredients and the comments people had made were very helpful to achieve an great outcome. We used 100 gm red lentils and extra carrots instead of the potatoes and celery and we added 1 teaspoon apple cider vinegar, 1 red capsicum and 2 tomatoes. My husband had been dubious however really enjoyed it. Thank you for the recipe.

    This is delicious!  I didn't have any celery so left it out but it was fine without it.  I only cooked for a bit over 20 minutes too (as I got too hungry lol).  Also, I ended up putting it back on and blending it for another minute up to speed 9 as it was a bit lumpy after only 30 seconds (depends what texture you like though!).  Great recipe, thanks.

    Hi...the soup tastes awesome...however I cut down the cooking time from 40 minutes to 20 minutes....as the ingredients are already choped to small pieces...after all we are using the Thermomix

    Also, if you use TM Stock concentrate...no need to add additional salt - just a thought
