Creamy Mushroom Soup . . . HOWEZAT!

Ingredients

Mushroom Soup

  • 100 grams Butter, diced
  • 500 grams mushrooms, peeled (if desired)
  • 1 clove garlic
  • 50 grams TM Vegetable or Chicken Stock, (i usually use vegetable as its always in the freezer)
  • 400 grams water
  • 3 MC of cream
  • 3/4 teaspoon All-Spice
  • 1 handful of parsley
  • pepper to taste
  • Sour Cream and Fresh Parsley to garnish

Recipe's preparation

    Mushroom Soup
  1. Add diced butter and garlic to the bowl, speed 9 for 5 seconds
  2. Add mushrooms, speed 9 for 15 seconds, using the spatula to assist mixing.
  3. Veroma speed 3 for 5 minutes.
  4. Add stock and water. 100 degrees, speed 3 for 20 minutes.
  5. Add parsley, speed 7 for 10 seconds.
  6. Add All-Spice, pepper to taste and cream, speed 4 for 10 seconds.

Tip

This recipe has been adapted from the Low Carb made easy book by John Ratcliffe.  This soup is a Protein dish and is ideal for freezing in portions.  I always have it in my freezer as its great for a quick lunch.

    Made this today to use up some mushrooms, I reduced the water to 300, as was said and added 100ml thick cream.

    It was beautiful.

    So tasty and flavorful! After reading the comments I made the following adjustments - 2 garlic cloves, added a handful of dry porcini, 300ml water, 1 veg stock cube, no parsley or allspice, 1 MC of sour cream and 2 MCs of cream. Because the creams were cold I also cooked for a further 3 mins, speed 1 100 degrees after the last step

    As others have suggested reduced water down to 300grams, added a full teasoon of all spice amd used fresh corriander in place of parsley (only as I dont enjoy parsley), all 3 of us enjoyed the soup and enough spare for my lunch tomorrow!

    Also loved this. After reading comments added 3 cloves or garlic, dried porchini mushrooms at time of adding other mushrooms, 300ml water. After cooking added the 75g cream cheese as per the Cookidoo mushroom soup, some cream and added thyme with the parsley. Recommend doubling if feeding a family of 5.

    Excellent! Don't even bother making a single quantity, go ahead and double it (lest you'll have none for lunch tomorrow).

    I reduced the water, stock and all-spice, but you really can't go wrong however you decide to roll with this one.

    After reading through comments, I made the following tweeks:
    - 300ml water
    - 30gm meat stock paste
    - 200ml sour cream plus 100ml cream.
    I also added a half handful of dried porcini mushrooms in with the fresh.

    Very good mushroom soup. Used beef stock instead of chicken, and used ghee instead of butter as I had ran out. Way better than the one in the Basic Cookbook (which was quite horrible to be honest).

    Excellent soup. I used all kinds of mushrooms, all the ones in my refrigerator, I always do this, why waste mushrooms. I did not use water I used actual chicken stock with the TM chicken stock paste, also used pepper at the end but no more salt. It is a lovely soup perfect for a healthy lunch.

    81st review! This is a sophisticated soup. The hint of allspice lends a hint of the Indies. We all loved it.

    Only thing I altered was putting in 1 tablespoon of stock concentrate and milk instead of cream. I've been on the look out for a 'go to' mushroom soup and this is it! I did wizz it till it was really smooth, another reason I used milk.

    Delicious. Best mushroom soup i have tasted in a long time. Restaurant quality. Added an extra clove of garlic and left out salt as home made vegi stock was enough. Had this with home made whole meal rolls. Definitely going in the favourites folder.
