Curried Pumpkin Soup

Ingredients

Soup

  • 1 onion
  • 2 garlic cloves
  • 15 grams olive oil
  • 1 teaspoon grated ginger
  • 1 tablespoon Hot or Mild Curry Powder
  • 1 tablespoon sugar
  • 750 grams water
  • 2 tablespoon vegetable stock
  • 300 grams butternut pumpkin roughly chopped
  • salt to taste
  • 1 can Unsweetened Coconut Milk

Recipe's preparation

    Soup
  1. Chop onion & garlic 3 Sec/Speed 7 scrape down sides of bowl and add olive oil, cook for 3mins/Varoma/Speed 1

  2. Add ginger, curry powder and sugar, cook for 1min/Varoma/Speed 1

  3. Add water, vegetable stock, pumpkin & salt to taste, cook for 15mins/100 degrees/speed 1

  4. Slowly puree 1min/Speed 9

  5. Add coconut mil and heat for 3mins/100 degrees/Speed2

Tip

To garnish you can add parsley, mango chutney or chopped roasted cashews or all three.
