Fish & Vegetable Soup

  • 2-3 cloves garlic
  • 1 stick leek white part only, roughly chopped
  • 1 onion, roughly chopped
  • 20-30 g oilve oil
  • 2 sticks Celery, roughly chopped
  • 1 carrot, roughly chopped
  • 400 g fresh tomatoes, roughly chopped or 1 can diced tomatoes
  • 1 tablespoon thermomix vegetable stock, or 1 cube chicken stock
  • 1 tablespoon tomato paste
  • 500 g water
  • 500 g firm white fish fillet or frozen hoki fish, cut into cubes
  • 1 bunch parsley, roughly chopped
  • 1 red chillli, (optional) de-seeded
  • Salt &pepper to taste, optional

Recipe's preparation

  1. 1. Add garlic, leek, onion and chilli (optional) into Closed lid 5 Sec / Speed 7 

    2. Scrape down, add oil & saute 3 min / 100C / Speed 2

    3. Add celery, carrot, tomatoes & tomato paste 10 Sec / Speed 8 and scrape down

    4. Add stock and water cook for 15min / 100C / Speed 2 with basket on top of lid

    5. Cover TM cap and blend 1 min / speed 10. Be careful with heat,

    6. Add fish and cook for 5 min (fresh fish) or 8-10 min (frozen fish) / 100C / Counter-clockwise operation / Speed 1

    7. Granish & stir through schoope parsley and optional salt & pepper to taste

  • Used defrosted hoki fillet,

    Used defrosted hoki fillet, and make have overlooked as it still had ice 7 minutes. As a result the fish was a little dry. Nice flavourfor purée though.
